    From "The Mexican Slow Cooker" by Deborah Schneider. So many recipes in this book look so appealing. I have not made this one yet, but it contains so many ingredients I love. The author first tasted this soup at the Xochimilco market south of Mexico City.

    The cauliflower and potatoes readily absorb the flavors of the spices and other seasonings in this Indian slow cooker dish. Pureeing the onion and spices together before cooking helps to bring out their flavors in the stew. Recipe is from my Fresh From the Vegetarian Slow Cooker cookbook.

    Black-eyed peas are a veggie/bean I don't use too much in my cooking and I'd like to use them more. Most recipes I've seen using them call for baking or frying up with ham or pork. This is simple, vegan, and has lots of flavor. Make sure that you are using dry black-eyed peas-- not canned. Better yet, you don't have to pre-soak these like you normally have to with dried beans. Variation hint: if you don't care much for the cilantro lime part, just nix them, add 1 tsp lemon juice instead. I also think this recipe would do great in a slow cooker like a Crockpot.

    I like to put crock pot meals together early in the afternoon so that I can turn on the crock pots and go run errands, set the table, etc. and be ready and relaxed when my guests arrive. After trying different methods for making wild rice mixes - I think I hit on the right timing and water to get the rice to turn out just right. I don't know if you'd really want to call this a recipe -- maybe just a crock pot tip????

    Got this recipe online a couple years ago. I've tweaked it a little bit and will probably continue to experiment by throwing other vegetables in. It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well.

    This is from Fresh from the Vegetarian Slow Cooker by Robin Roberston. Note, I am posting this as written but there are four things you should know: Instead of buying a box of instant Seitan Quick Mix (which is more expensive than making it from scratch), you can use 1/2 of the dough from Recipe #149322 (don't make the entire recipe- just follow the instructions for mixing the vital wheat gluten and the liquid- use the spices in this recipe. z-mail me with questions or post in the vegetarian forum and I'll explain if needed). Also, this recipe is meant for a 5 or 6 quart crockpot. Next, I do not cook the vegetables first- I just throw them in and they turn out great. Finally, you will want to use enough vegetable stock to submerge all of the veggies and seitan dough. The amount posted below was not enough for my crock.

    This is so good and easy to prepare in the crock pot. I got this recipe from a crockpotting blog and tweaked it to suit our tastes. Now I'm addicted to falafel. It's a middle eastern dish that is usually served in a pita with a cucumber/yogurt sauce but we prefer it wrapped in a corn tortilla with lettuce, tomatoes and a tangy ranch dressing. Even the kids eat this one up.
