This dish has such pretty colour and great flavour. It is a little different from the one already posted, as it has tomatoes and cheddar cheese. This is from TOH. I have posted it as it appears in the magazine but if you use a non-stick pan, as I do, reduce the oil to 1 tbsp as you don't need that much oil.
Adapted from Kitchen of Light. The original used unsalted butter, but I prefer salted. If you do use unsalted butter, adding a pinch of salt might be a good idea. I do not recommend a nonstick pan for this dish.
Health side dish. Mums recipe which no roast was complete without. The herbs vary, if I have fresh basil in the garden I also layer in between. Measurements are also pretty rough. I use the microwave to really cut down on the cooking time. Works a treat.

This is the recipe I use when it's my turn to bring vegetables to a potluck, although I double the recipe. Because the casserole can be sliced into pieces, it makes it easier to carry around on a paper plate. You can vary the vegetables in this dish to suit your taste.
