Can't believe it, but there's no other recipe like this on Recipezaar (unless I somehow missed it). These babies are so, so good. I roasted canned artichoke hearts in connection with another recipe I invented, and was so pleased with the way they came out even without the topping, so I'm posting a plain(er) version. I found that roasting them enhanced the taste and texture - made them more tender on the inside:D One of these "throw it in the oven and ignore while you are fixing other parts of dinner" recipes!
Also known as Bohemian squash or sweet potato squash, delicata has a rich yellow flesh and a buttery, sweet-corn like taste. The skin is edible and delicious as well. Low in calories and high in fiber, delicata is a good source of vitamin A.
There are so many ways you could flavor this squash. Below are a few of my simple favorites.
Made with green/white cabbage but try napa cooking for a shorter time. This has the perfect heat and sweetness. I used this side as a bed for Recipe #314086 to make a delish low carb meal.

A delicious recipe using red cabbage, fragrant spices & apples or pears; whilst this is happily cooking away, the spicy smell pervades the kitchen & indeed the rest of the house and heralds the start of my festive baking & freezing season - who needs expensive pot-pourries! Not only is this dish delectable to eat alongside turkey, pork, beef and hams in particular - but the colour is just gorgeous, a rich jewelled ruby red! This cabbage can be kept warm for long periods, reheated and also freezes very well, making it a very well behaved recipe!!
Thin strips of meaty portobello mushrooms with a crunchy nut coating, sauted in olive oil, become wonderfully satisfying! A great breakfast entree, or side dish, or snack! Adapted from Mollie Katzen's Sunlight Cafe(Breakfast All Day).
There are so many ways to serve this wonderful veggie. I use it in place of pasta. You can experiment with different sauces and herbs to create a great tasting dish. Try it with Alfredo sauce, or add some pesto and butter or your favorite herbs.

Just made a roast? This is Great to make while roasts are resting. Just have it prepped and ready to put into the hot oven. Brussels sprouts are loaded with vitamin A, folacin, potassium, calcium. Have 3-5 grams of fiber per cup, and at 25 calories per 1/2 cup cooked, they give us a reason to eat them more often. Brussels sprouts are one of those foods that will fill you up, without filling you out.
For vegetarians you can make a grain along side these because they have a good amount of protein. This also works great when you stir fry them!
While in Vegas, this was an item on the buffet at the Paris. I ran into the executive Chef and gave him my compliments, because it was SOO yummy! He gave me an idea of how they made it... mine turned out very close to what we had in Vegas. (prep/cooking time does not include pre-mixing the yogurt sauce)
A few simple ingredients transform this mild tasting vegetable into a memorable side dish. My whole family loves this, even kids and at only 2 grams of carbs per serving it is a great dish to beat back the pasta craving! It tastes alot like spaghetti alfredo. I usually serve this with grilled chicken. My girlfriend passed this recipe on to me, I have no idea where it came from. If you are watching carbs it has a net carb count of only 2 grams per serving. For those doing Atkins, use the heavy cream, for those on SBD use milk and add a wee bit of thickener if needed.
