    This sounds good for anybody looking for a quick and tasty meal. It is vegetarian too which is always great in my books. I originally found this recipe in the September 2008 copy of the BBC Good Food Magazine. The recipe states that the dish can be frozen for up to a month. It says to just defrost and bake in a medium oven for 20 - 30 minutes until piping hot.

    This is so easy to make and Feingold friendly. I normally make up a huge vat of this and then freeze the leftovers. So add ingredients accordingly. I also add some sour cream or heavy cream and turn this into a tomato soup base. It's then easy to throw in tortellini or pasta for texture.

    I'm posting this recipe for eggplant and or zucchini. No need to peel the zucchini. I've also done both in one recipe. You can also just oven bake the eggplant and dip into sauce for appetizers. My husband and I just love it! Especially when the eggplant and zucchini is home grown! No buttermilk no problem just place 1 teaspoon lemon juice or vinegar in a 1 cup glass then top with milk let sit while gathering the rest of the ingredients.

    I saw Nick Stellino make this dough and use it to make four calzones. It will also make two pizzas. I've done both and they turn out wonderfully! My key to a great pizza is to slice everything VERY thin and to not pile it on too thick. Our usual pizza is feta, garlic, freshly grated parm, fresh spinach, toasted pine nuts, tomatoes, mushrooms, mozzarella, a drizzle of olive oil and salt and pepper. I highly recommend it!

    The only way to eat fresh tomatoes! In anticipation of the impending tomato harvest, I share with you a family secret. This is the reason we look forward to the end of summer, to the time when our gardens and our friends gardens are bursting with little red-skinned treasures. When I tell anyone about this, besides my brother and sister -- we learned it from Mom -- and my children -- now that I've gotten them to try it -- they think I'm weird (well...yes, I am, but this isn't why). People looked at me oddly when I made this in the college cafeteria. At least I thought that was the reason. It never tasted right, though. I think the foodservice tomatoes were plastic. My husband seems to shudder if he sees me or the kids consuming this treat, but then, he hates warm peanut butter. Period. Won't touch it. I haven't managed to get any of my in-laws to give it a try; my husband's Dad just looks at me and shakes his head. Come to think of it, I get a lot of that from him. So, what is this food that most people seem to find so repulsive that they won't even consider it? I just call it exactly what it is: Peanut Butter and Tomatoes on Toast. If you're intrigued, the extremely difficult and intricate recipe follows below. If you think I'm weird, get in line. Grossed out? Get over it, and try it already. I thought it was pretty gross the first time I saw my Mom eating it, too, but she made me take a bite, and I was hooked.
