    Mindelicious' Vegan Yum Yums

Cookbook for all my recipes that are VEGAN!!!! I <3 Vegans!! In some cases I have just listed sugar or brown sugar, if you are vegan make sure you are using organic or raw sugar otherwise it's not vegan. I'm pretty sure that is the only item in these recipes that would be iffy. ENJOY!!

(LFRV) A wonderfully rich pudding parfait made of only fresh yummy fruit!! Grab some parfait glasses and ENJOY!!

    Recipe #450452

(LFRV) I'm not huge on juicing because it gets rid of the fiber and changes the natural balance BUT this is amazingly delicious. This makes one serving - I personally triple the recipe to use the whole lemon & so cleaning the juicer is worth it :). Recipe came from "The Juice Master" Jason Vale....check out the video here: http://www.juicemaster.com/recipes/juices/sherbert-lemonade

    Recipe #450455

(LFRV) Start your day off right with this super easy and oh so yummy smoothie!! Three of my favorites come together in an amazing combo - enjoy!! Soak your dates ahead of time if they aren't that soft (throw the soaking water in for extra yumminess!).

    Recipe #450453

Super yummy picatta version from Isa Chandra Moskowitz's book Appetite for Reduction (love this book!). She pairs it with arugula and recommends serving over mashed potates (Caulipots anyone?) instead of with the traditional pasta. Who doesn't want another excuse to eat mashed potatoes? Also if you want more bulk try adding in some mushrooms. Enjoy!!

    Recipe #449829

A low fat & simplified version from Isa chandra Moskowitz's book Appetite for Reduction. Instead of using hard to find Jamacian curry spice blend she uses this cheater version which simply adds star anise to regular curry powder - problem solved!! She recommends serving this tasty curry over rice but I served over quinoa and it turned out great as well. We cut the plantains up into smaller pieces than she recommends but that was just personal preference.

    Recipe #449827

Well not exactly 40 but 10 and that's still alot!! This is a great meal to throw together, put it into the oven, and go do whatever until its ready. Very simple but amazingly tasty!! I recommend serving with Caulipots (Cauliflower Mashed Potatoes) which can be found in her book. This recipe comes from Isa Chandra Moskowitz's book Appetite for Reduction - 125+ fast & filling low-fat vegan recipes. Enjoy!

    Recipe #447759

This is a super easy hummus recipe in which you don't need tahini and the result is still great tasting & creamy. Not the most amazing hummus in the world but if your into cutting fat & calories this is a great one to munch on. Isa also gives us 6 variations for this hummus. This recipe comes from Isa Chandra Moskowitz's book Appetite for Reduction - 125+ fast & filling low-fat vegan recipes.

    Recipe #447757

Super quick & easy but healthy & flavorful!! We usually just use the crunchy taco shells you can buy in the store. This recipe comes from Isa Chandra Moskowitz's book Appetite for Reduction - 125+ fast & filling low-fat vegan recipes. She recommends serving it with the Garlic-Lemon yogurt but its not a must.

    Recipe #447755

This recipe comes from Isa Chandra Moskowitz's book Appetite for Reduction - 125+ fast & filling low-fat vegan recipes. Isa recommends serving this with her recipes Unfried Fried Rice & Five-Spice Delicata Squash which can be found in her book. I made these for some non vegan friends who were weary of tofu but they said these were amazing!! This recipe is very easy & the result is cool & crisp on the outside while warm & sweet on the inside. YUM!!

    Recipe #447751

This looks a bit lengthy but its really not that complicated. This may be one of the greatest things I have ever cooked up. This recipe comes from Isa Chandra Moskowitz's book Appetite for Reduction - 125+ fast & filling low-fat vegan recipes. She describes it perfectly: "Silky rice noodles, cool cucumbers, and refreshing mint are spiced up with chili garlic sauce". Serve with extra lime wedges & more chili garlic sauce.

    Recipe #447754

(LFRV compliant!) Popular high-carb high-calorie get you moving drink loved by many Low Fat Raw Vegans aka Frugivores! Struggling to get your calories in? This is the key & tastes amazing!! The amount of water is up to you - less for more of a pudding and extra for more of a milky drink. Play with the ratios to find what you prefer!! Popularized by Freelee at 30bananasaday.com. Soft, succulent, organic medjool dates are best but any will do. Soak your dates for 6 hours or overnight. If you can't get organic then discard the soaking water or drain & rinse about half way through the soak time and keep the second round of soak water. (Times don't include soaking). Remember food combining!! This will move fast through your system so nothing heavier before and wait an hour after sweet fruit for a different type.

    Recipe #424668

(LFRV compliant!) This is a great anytime a day drink however this is perfect as a before dinner smoothie as it contains digestive enzymes. Bromelain, an enzyme in pineapple, breaks down cholesterol in the blood and reduces inflammation in the blood and tissues. Bromelain also eliminates muscle, joint, and headache pain and also helps break down fats. Papain, an enzyme in papaya, breaks down protein molecules in the blood, reducing inflammation that is linked to allergies or pain. Papain even attacks a protein on the coating of cancer cells which helps eliminate this threat.

    Recipe #429535

(LFRV compliant!) Oh my!!! I have had this two days in a row and I don't think I see an end in sight - sooooo delicious!! This is so creamy, rich, and so much better than any mint chocolate ice cream I have had (mainly because I can have so much without feeling awful afterwards!!). I use lady finger bananas which are much smaller than normal bananas...I'm not exactly sure how many this would be equal to so I had to use cups...sorry if that causes any difficulties. You may add more mint or carob depending on your tastes - this was just enough to get the flavors for me without wasting. Also I put this down for 2 servings but I drink the whole thing and feel amazingly energized but I guess you could share if you like :)

    Recipe #428893

(LFRV) This is a quick delicious way to get some greens in and ensure all the iron is absorbed properly thanks to the Vit C in the mangoes. The spinach amount is a starting point and you can always increase it if your tastebuds will allow. You can also switch the water out for coconut water if that's something you do. ENJOY!

    Recipe #433777

Oatmeal is a great addition to a smoothie — it’s a thickener with lots of fiber and nutrients. With the pinch of turmeric in this recipe comes curcumin, a compound that has been used for centuries in Ayurvedic and Chinese medicine for its anti-inflammatory properties. By Martha Shulman & posted on the NY Times Website.

    Recipe #423527

(LFRV - in moderation) Heavenly!! This is an absolute delicious drink to start your day or anytime you need PURE ENERGY! This will also ward off any cravings for junk food you might be having. You can find young coconuts in some grocery stores but most asian markets will have them. They have white husks - not the old brown ones. NOTE: This does require a juicer and a sturdy knife.

    Recipe #427475

(LFRV) Oh I love this dressing!!! I've had it three nights in a row and I'm thinking about it right now. I pour this over baby greens, celery, cucumbers, and shredded red cabbage and I think its quite magical!! This recipe is for one serving so multiple as needed. You could easily add any herbs or spices you want but this is perfect for me!

    Recipe #430054

(LFRV - skip the oil!) Very yummy!! Fresh way to use all those delicious berries! Gather up your favorite greens and pour this on for a sensational spring/summer salad.

    Recipe #429540

This is a quick dressing to throw together and the ingredients are normally on hand. The original recipe calls for honey but you can use your liquid sweetner of choice (I have used agave & date paste & both work well). Hope you enjoy!!

    Recipe #427710

This is a raw vegan recipe which I really enjoy - not sure if I'm just weird or what though. The original recipe calls for honey but I don't use that so I've just listed as liquid sweetner. I have used agave nectar and date paste with great success.
