    Vegan with a Vengeance!

This cookbook is aptly named in honor of one of my favorite cookbooks by Isa Chandra Moskowitz. I encourage you to check it out if you haven't already. Since becoming vegan several months ago, I have jumped in head first to veganism, and am loving every minute of it! It is always fun to create and cook deliciously healthful meals without the use of any animal products

This is a DELICIOUS spread that is great for vegetarians, those trying to incorporate more soy in to their diet or those who just want a healthy snack! This is a very healthy alternative to mayo on sandwiches, cream cheese on bagels, etc. This is fabulous as a pizza or pasta sauce too! I also love putting it on crackers as a healthier and tastier alternative to cheese! Enjoy!

    Recipe #272937

From Veganomicon - The Ultimate Vegan Cookbook. Many vegetarians who decide to take the leap to VEGANISM, find it hardest to give up cheese. While I feel that most the FAKE cheese products out there are trying to mimic something that they just CAN'T, this version of grated parmesan comes pretty darn close to that nutty, salty topping that grated parmesan or other hard cheeses gives to a dish of pasta! This recipe is great too, because you can make it in seconds right in you kitchen instead of shelling out 3 times as much for the pre-made vegan grated cheese they sell in the store. The original recipe calls for 1/8 tsp salt, I use closer to 1/4. Use your taste.

I've been trying to come up with different ways to have citrus with leafy greens & this is an excellent option! When Vitamin C is consumed with iron it makes the iron much easier to absorb. Tons of people are iron deficient & not because they don't take in enough iron....rather that they are not absorbing it properly (You can pop iron pills all day long but if your body isn't doing anything with it your wasting your time & money!!). Citric (citrus fruit) & malic (apples & pears) acid increase the absorb of non-heme iron (dark leafy greens) which is the best form of iron. Soooo pour this lovely goodness all over a huge plate of dark leafy greens!! Kale, romaine, baby spinach....whatever your fancy!!! (LFRV in moderation + leave out oil & salt)

I went to a health seminar given by an executive chef and got this recipe. It's from the cookbook, Tasty Vegan Delights!

    Recipe #326959

I made this up when I had an avocado that was getting too ripe and some leftover cilantro. It's good with chips or cut-up veggies, as a topping for mexican food or baked potatoes, etc. Totally vegan and even my husband liked it.

    Recipe #112959

My vegan version of a classic lunchtime treat! This is amazing between two slices of grilled whole wheat bread. Feel free to substitute minced red onion for the scallion in this

    Recipe #289276

Made this as part of the "pickies" I had out for Mother's Day this year, mostly from ingredients I had on hand. This is delicious with tortilla or pita chips. I have also been taking the leftover with me to work, served over a bed of greens. All spice measurements are approx. I did them all "to taste".

    Recipe #303660

Inspired by a WW Core recipe, but I ended up changing and adding too many other ingredients for personal taste. This is wonderfully fresh, delicious and tangy!

    Recipe #301513

This is a low fat snack and is wonderfully delicious. Serve it at parties or when watching your favorite movies. Adapted from The Ultimate Uncheese Cookbook by Jo Stepaniak. Cook time is estimated time to pop popcorn.

    Recipe #320344

It's Cinco de Mayo, and I'm CRAVING guacamole... I totally threw this together on a whim, and I think it was one of the BEST I've ever made. Please note that I used my Penzey's Smokey Flavored Salt for the salt listed in the recipe. Plain old salt is ok too!

I really don't care for the hummus on the market these days, so I make my own. The proper way to serve this to guests is to create a small well in the center and pour a little bit of extra virgin olive oil in it, but I don't usually bother for myself. If you want flavored Hummus, just add the ingredient in that you want. Though it has a clove of garlic this is not garlic hummus - for garlic hummus increase the number of cloves to 3 or more to taste. Serve with crackers, pita toasts, veggies, salami, or anything else you wish! This is alot less expensive than buying hummus too! I've looked at the other hummus recipes here before posting this, but none were quite the same as this classic I have been using with rave reviews for years.

    Recipe #348475

From Bon Appetit, June 1996. For an even healthier version, use whole wheat couscous instead. Accompaniment to chicken, shrimp, grilled tofu, etc. Makes a large serving ideal for your next picnic or potluck!

    Recipe #174845

    From "The Farm Vegetarian Cookbook."

    Recipe #225433

I haven't tried this yet, but it's from "May All Be Fed" by John Robbins and his recipes have never failed me. "...tastes great on crackers and is delicious on pizza."

    Recipe #283727

Sounds so yummy! This recipe is from Neva & Jim Brackett's 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes. Update: I tried this today and was really pleased with the results! I used it with recipe #161324 by Tigerduck and I couldn't tell it wasn't real sour cream. Of course you can tell its not the real thing when eating it plain, but it's still nice. Best alternative when mixing it with other ingredients you would use sour cream with though. I'm sure I'll get the same terrific results when I use it in a black bean soup I plan to make tomorrow.

    Recipe #247817

This simple sauce can be thrown together with items most people have in their pantries! Great for dipping potstickers, Spring rolls or Summer rolls. The Asian hot sauce in the ingredient list below can be subbed with Asian hot chili oil, if you prefer. I like to use Sriracha Hot Chile Sauce.

Based on my: Recipe #380398, this is a delicious addition to your favorite vegan gravy or pizza.

    Recipe #412473

I order this delicious sandwich in a local deli. For the spinach hummous in the original recipe, I substituted baby spinach leaves and regular hummous. Serve on your favorite bread: cracked wheat, multi grain, marbled rye, whole wheat sourdough, etc. Proportions are estimated.

    Recipe #210899

This was served at a nutritional class I attended and I really enjoyed it!
