The spinach "ricotta cheese" mixture is made with firm tofu and vegan cream cheese. It tastes rich & the white layer looks beautiful when served. Very easy to prepare and not runny like so many other vegetarian lasagnas seem to be. Very well received by non-vegans.

    Recipe #114710

I am taking a "Healthy" Cooking class, sponsored by the university where I work. One assignment was to make-over a recipe to be more health conscious. Because I am a vegan, and unfortunately can't eat many of the dishes prepared in the class each week, I decided to make over the recipe VEGAN. The original recipe was a lasagna with a meat and cheese layer. I have substituted the full fat ricotta cheese layer with my Tofu Basil Ricotta and the "meat" layer with a vegan version of my grandmother's homemade ravioli filling (traditionally a mixture of ground beef, pork sautéed with onions, garlic, spinach and spices) This was also the first time I used the "no-bake" lasagna noodles! : >

    Recipe #279709

I made this one day when I was running out of food. Surprisingly, it tastes really great! This would probably be good with chicken or chicken substitute as well.

    Recipe #167415

I don't know where I got this recipe from but it certainly is delicious. I changed a few things as I generally do to suit my tastes. I topped this off with a mixture of 1/4 tsp. cumin, 2 cups bread crumbs and 1 cup shredded Vegan jack cheese. I also sprinkled some paprika on top for color. I didn't include the time it took to cook the pasta in this recipe.

    Recipe #257687

Even the most ardent young veggie-haters will gobble up their veggies disguised in this tomatoey sauce. Come to think of it, so will I.... From the Calciyum cookbook.

    Recipe #250271

The only thing I can think to say about this is that it's really good! Eat it.

    Recipe #226068

Pasta is my passion, though I'm not a fan of dairy products, so this is perfect for my needs. I got this recipe from the Epicurious website.

    Recipe #244601

I found this recipe over at vegweb.com but I am typing it up here so I can use the easy conversions and see the nutritional information. It received so many positive comments that I have to try it. One of the only complaints is that it can be very salty, so you might want to consider cutting back on the soy sauce or not adding additional salt.

    Recipe #180878

Taken directly from Compassion Before Cruelty. Great vegan alternative to the comfort food, mac and cheese.

    Recipe #205443

This is an easy dinner recipe taken from a Peta magazine.
