    This was inspired by Recipe #297836, a recipe by M&A's, one of my Spring 08 Pick-A-Chef adoptees. I use Recipe #300266 for the tofu.

    I did those once at the restaurant I used to work at. Served it with a saffron rice pilaf. They sold pretty well. Prep ahead, as they need to marinate quite a while. Instead of grilling them, you can broil them in your oven, just moving them from side to side. My trick is to use frozen then thawed tofu, super meatier! At home i serve it with ratatouille (see my ratatouille caviar recipe!) and vegetables cooked in foil (See Recipe #303438) Some of the cooking time is marinating time.

    Brownies like they should be, without any gluten or casein. This is my standby, easy-as-pie brownie recipe, that is really easy to add anything you like into. I use a mix of Bob's All Purpose Gluten-free blend and a little starch for the total of 1/2 c. gluten-free flour. I've made these vegan with egg-replacer.

    When published in "Vive Le Vegan" by Dreena Burton, these were called double chocolate, but since there are really three forms of chocolateyness I thought I'd better change the title :-) Otherwise, however, these cookies are pure, perfect decadence... they just beg to be shared with the world! (I highly recommend buying Dreena's book for more of the same experiences!) Note: My picture is of what I made my dad for Fathers' Day. :-) It took about a third of the whole recipe and was like a jumbo brownie-cookie! MMm-mm!

    I'm posting my most used vegan recipe that I adore on its own, on nachos, on my husband's bald head, eating at work, just generally eating. My best bud maaweee loves it, my family loves it, all my mates love it, and it's so simple you will kick yourself on how simple it is. Put in veg you want to use from your fridge. To make it hotter, add more chili. Get psychopathic with the chili if you like it! I like using fake mozzarella and homemade guacamole on nachos for this. It makes for good weekend dinners. I could eat it now! Oooo nachos...... oh yeah heats up good the next day.

    In The Complete Guide and Cookbook for Raising Your Child as a Vegetarian by Michael & Nina Shandler, these are called "Eggless Oatmeal Cookies." I thought "vegan" would sound more appetizing as well as be about what they are rather than what they aren't. ;) I made these today and used apple-raspberry juice and King Arthur's White Whole Wheat Flour for all the flours, because that's what I had on hand. They remain fairly soft and I think it's best to store them in the refrigerator if you're not going to gobble them up immediately.

    I love pound cake. It has been a favorite with me since I was a small child. But, I don't like all the calories most of them have, so I've come up with this and as you can see from the photos it turned out great.     I made these this morning and found they cooked faster then I anticipated. I think next time I will bake these in non-stick mini loaf or bunt pans instead of a muffin tin. This recipe is very tasty and the muffins aren't overly sweet. You can use any reconstituted dried berries in these.
