    Using Rotisserie Chicken -- OR Any Cooked Chicken

    What a timesaver a rotisserie chicken is. Since the chicken is already cooked, most of the work is done. Just use the succulent meat in any recipe calling for cooked chicken meat. Salads come immediately to mind, but they are not the only possibility. Check out the ways a rotisserie chicken can be used. As a matter of fact, any cooked chicken may be used in these recipes, from leftover chicken to chicken specially poached for the recipe. Already cooked chicken is a perfect way to save time in the kitchen!

    Go to Wal-Mart (or your local grocery store) and buy one of those cheap oven roasted chickens (any flavor will work, but lemon-pepper is the best in my book...) Enjoy a meal with the chicken, then toss it in the fridge. The next day, you have the perfect chicken soup chicken in the fridge! I like it because it is dirt cheap and provides me 2 meals. Plus the soup is better than anything in a can!

    Adapted from Woman's Day magazine. I changed all of the ingredients to lower fat versions, but the original called for the full fat stuff, so by all means use whichever you prefer. Good way to use up a little leftover corn and chicken. If you prefer to not buy pre-bagged salad, just add a little shredded red cabbage,carrots, and sliced radishes to your favorite salad greens. You may also sub any type of cooked beans you prefer - chickpeas, kidney beans, black-eyed peas, etc. Shredded leftover pork or turkey would also be nice in this.

    This is quick and easy to make and great on a cold day. You can use cooked chicken breasts or the canned chicken works great (and is even easier. I also use the bag rice (that you boil). Whole thing can be put together in less than 10 minutes.

    This is so good, tender chicken and vegetables, a creamy sauce, and a crunchy golden brown biscuit like topping... I got this recipe from my aunt and though theres alot of chicken pot pie recipes on here, i havent seen this one... i baked it for around an hour.... i can't believe it took that long but it did... just trust your judgement on how long to bake it...
