Fresh and great when using pre-chilled produce, this smart little appetizer is wonderful as a snack or warm up to your back yard summer dinner party. I came up with this recipe when I went on the Vegetable Broth Fast and everyone like it so much I thought I would share the recipe with you. It is pretty much guacamole on a slice of cucumber. Except while on the fast I omitted the cilantro, onion and seasonings. Still pretty good. The dish is easy and quick to make. The perfect recipe for unexpected guests or when you find yourself in a pinch for time.

came home from work starving with no good ideas. when i looked in the fridge, it was full of vegetables bought on an optimistic trip to the store, and then ignored. the two (why?) bags of spinach i had were threatening a slimey protest if i didn't use them soon. wanted to write this down so i don't forget it next time i'm in a similar situation. i have totally guessed on measurements.

I had some beautiful large mushrooms and wanted to make them with a cheesy filling.

Another appie recipe for your collection. My family likes these on game day so they can "graze" all day long. So easy and tastes really good.

Rich-tasting yet light, this Brie pancake is a versatile dish. We have especially enjoyed it, in both its sweet and savory versions, as an unusual Sunday breakfast. From the book American Country Cheese (originally from Besnier America cheese company).

Easy and fun. Let the kids do this one.

A delectable tangy topping of Cheddar cheese, chopped olives, sun-dried tomatoes with cherry tomatoes - melted on little toasted bread rounds! Perfect for all types of parties, buffets, nibbles, Hors D'oeuvres, starters and aperitif snacks! I make up my toasted bread rounds ahead of time and store them in an airtight tin; the cheese rarebit mixture can also be made ahead, you just need to spread it on top of the toasted bread rounds and then pop them in the oven for 5 to 8 minutes. Perfect, tasty and very elegant! I usually use green olives, as I prefer the flavour when mixed with the cheese and tomatoes - but you could use black olives if you wish. I also use pimento stuffed olives to great effect, I am sure that almond stuffed olives would also be wonderful. Try to use a good quality thick sliced loaf of bread for the toasted bread rounds - it makes such a difference to the finished taste. This recipe is easily doubled or trebled for larger gatherings!

From I loved the beef lettuce wraps from a restaurant in Montauk, NY called East by Northeast. This was the closest I have found to recreating it with a few minor adjustments from me.

These are super easy to make for a dinner party or as a dinner appetizer. I always make them for the Christmas holiday season and use spinach tortilla rollups.

This is a great little appetizer that can be made ahead of time and frozen. When guests arrive, just pop them in the microwave to reheat. Everyone loves them and they are so easy.

These are impressive, but almost embarrassingly easy, Think of them as a little appetizer sized Caprese Salad. It makes a huge difference in this recipe if you use good cheese, oil, and vinegar. Adjust the oil and vinegar to your taste, measurements are not exact.

These "dumplings" can be pan-fried or steamed. Serve with the dipping sauce. Make it as spicy as you like by either using spicy sesame oil or Tabasco sauce, to taste.

This recipe is from The Mediterranean Vegan Kitchen. It's fantastic! I prepared it for a small get together at my house and everyone loved it. You can add cheese (mozzarella or parmesan) to make this vegetarian if you'd like.

Halloumi cheese is one of the only cheeses you can grill or fry without it melting all over ! Traditionally Cypriot its seen on the BBQ and Grills all over Cyprus and Greece being used in many ways including in pitta breads to make a very tasty sandwich!

A yummy appetizer, serve with Salsa and Sour Cream... : )

I thought this recipe sounded really good. Instead of your usual cheese ball, I thought the presentation of this would be really unique-salmon truffles?! I found this recipe in our weekly grocery flyer. The recipes it posts are always great!

I got this recipe from a Nigel Slater cook book but when I made it I altered it to include chopped garlic as I think it makes it nicer. Really nice although Camembert can be a bit smelly!

I made these for an appetizer evening and they were a big hit. The shells can be made ahead of time and frozen which is great for cutting your prep time on the big day. This looks especially festive at Christmas with green and red pepper jelly. If you make your own jelly, you can serve these at a Bridal shower in the bride's colors ;)

These are a fun appetizer and a much easier way to serve brie to a group. They are very versatile so you might want to try a brown sugar and walnut filling instead of the cranberry, or whatever is your preference!
