These are recipes for ingredient substitutes or homemade version of storebought stuff that can be made on the fly...incredibly handy for when you want to make something and have just run out of an ingredient (which always seems to happen to me).
I found this on ochef.com. According to them, recipes using dried (powdered) milk approximate the texture but not the flavor of true sweetened condensed milk, and the following recipe tastes much better. It is not as thick as regular condensed milk, but it works fine as an ingredient in bar cookie recipes. SOURCE: www.ochef.com
Okay, okay I know. True tiramisu uses mascarpone, but just in case your local Safeway or whatever doesn't carry it, which is often the case, this is a good substitute. I used it in Emeril's tiramisu recipe and it came out very nicely. Just thought this might help someone.
This was in a United Emire LOyalist Cookbook with a note that it was originally from a 20th century cookbook from 1906. It is much more powerful than any you buy. Good in a pinch if you are out and happen to have the other ingredients on hand.
Ghee is a healthy alternative to butter and oils. Ghee is an ingredient in many Middle Eastern dishes. It is also called clarified butter. It is available at natural foods and Indian product stores or you can prepare the ghee yourself. Is an unsalted butter that has been cooked to remove not only its butter fat solids, as in drawn butter, but also all water -- so as to produce a food that contains no molecular oxygen, and is thus extremely storable and not subject to rancidity as in normal cooking oils. The health advantages accrue from the fact that ghee contains no oxidized cholesterol, the kind which leads to free radical damage in the cells of the body.
Paula Deen made this on her show. It is the butter that sets this apart from other recipes. This milk is so thick and creamy you will want to eat it with a spoon (or at least I always do)! I have used this several times and it has worked like a charm. I am so happy to have this for the holidays, since it's usually the one ingredient I'm out of.
This is close enough to real thing, although I have never tried it but I imagine that the mixture could be frozen until ready to use --- *note* do not double the recipe as it will not thicken properly, make two separate recipes in two bowls, use only *pure* vanilla extract for this :)
I always seem to not have buttermilk on hand when I need it. I've used the powdered milk and vinegar version of this which works well, but today I didn't have any powdered milk! This substitution that I found on the internet works just as well.
