    I am going to have a bumper crop of tomatoes of all kinds this year so I am starting a cookbook for all those wonderful tomato recipe I want to try!

    I really love the Tomato Basil soup from La Madeleine but it has a lot of butter and cream in it and this sounded like a healthier alternative. I got the recipe from the grocery store where I shop.

    A great way to use up the fresh tomatoes from your garden! This dish can be served as an appetizer with warm Italian bread or along side a sandwich. --NOTE-- Cooking times is actually the chilling time for this recipe.

    This is heaven, being able to sit down and eat a whole bowl of bruschetta! It is pasta though so there isn't the browned factor unless you put it in a casserole and broil it for a minute. It is awesome served with blackened chicken or garlic shrimp as well.

    If you are a garlic lover, you might want to consider adding in about 1-2 tablespoons (or to taste) fresh chopped garlic to the tomato mixture. If possible, try to purchase only the spicy Clamato juice for this. The tomato mixture can be made even a day ahead (in fact it is even better if prepared ahead of time) pureed and left in the refrigerator until ready to use, just heat in the microwave before adding to the flour mixture. This is one of the best recipes for homemade tomato soup, so I really advise to double the recipe, you won't be able to stop eating this, it is that good! Serve with crusty bread rolls.

    If you need an easy appetizer to put together, try these. Although it calls for plum tomatoes, the smaller vine tomatoes can be used. Just select tomatoes that are about the size of your baguette slices. These are very refreshing and also very attractive to serve. I love serving them in the summer when the tomato crop is at its peak -- but they are equally nice served during the holidays with their red, white and green color. Note: The prep time does not include the 8 hours the mixture should chill prior to serving.

    This is a nicely-flavored simple salad that I love and make often in the summer. My husband is not as crazy about tomatoes as I am, but he will eat seconds of this dish. I clipped the recipe out of a newspaper several years ago.

    Recently had an extra pint of cherry tomatoes on hand and was in search of comfort food. Devised this soup in a pinch and thought it was worth sharing. Mine was a quick soup for one but the recipe has been scaled up and uses the more economical Roma tomato. If you have lots of cherry or grape tomatoes -- they have a sweetness that pairs beautifully with the vinegar -- use them or do a mix with the roma tomatoes. If you are making this Kosher, skip the cheese or be sure to use vegetable broth.
