Tofu

Tofu is made from soybeans that have been made into milk, into which a coagulant (nigari or lemon juice) is added, and the curds are collected and pressed to make tofu. This processing of the soybean makes it easier to digest and creates a vegetable protein source that is high in B-vitamins, calcium, phosphorous, iron, sodium, and potassium. Tofu has a cooling property, and will relieve inflammation of the stomach. You can start the day off with a smoothie made from it being an energy tonic. It detoxifies the body and neutralizes toxins, making is useful in cases of alcoholism. Tofu comes in Extra Firm, Firm, Soft, and Silken. Use extra firm and firm for stir fries, baked tofu, fried tofu. The soft and silken forms of tofu are great in desserts and smoothies. Beautifully seasoned salmon on a bed of veggies which I also served on a bed of Shirataki (Pronounced SHE-RAH-TAH-KEE)fettuccine noodles that LOW CARB FOOD!: containing 3g of carbohydrate per serving. LOW CALORIE: 20 cal / 4 oz. NO CHOLESTEROL, NO SUGAR, GLUTEN-FREE, DAIRY-FREE, CONTAINS 10% CALCIUM. The only added oil in this recipe is the teaspoon of sesame oil keeping it low in fat. Yes salmon is high in fat but it's a great fat so do eat and enjoy this healthy meal! This is a quick moving recipe so have all ingredients prepared as called for.

I fooled a lot of people; they still think the pie couldn't have tofu in it! I make it with a lot of spices. Be flexible; use more or less as need be. I also skip the crust and put it into a Pam-sprayed dish.

Thanks to Dr. Weil for this recipe. For a quick and exciting meal, this healthful version of a popular Mexican dish is hard to beat. The baked tofu neatly replaces beef and, along with olive oil, provides good fat. Nonfat whole-wheat tortillas make very good fajitas. They have none of the hydrogenated fat of conventional white-flour tortillas and give you some fiber.
