Sliced fennel can also be added with the tomatoes and onions, and Parmesan to the breadcrumb topping. Make sure breadcrumbs are coarse.

I was looking for something a little different for lunch box snacks and came across this recipe in a magazine a few years ago. They can be served hot or cold and keep for up to 3 days in the fridge. DD loves to take these to school or as a snack to microwave at dancing. Sometime's I pop a cherry tomato in, or chopped spring onions or cheese on top which is also nice. The options are endless!!!
Another idea a friend had, was to use minature muffin pans and she made these for appetiser's at her party !!!
A light and delicious dessert which I found in a magazine, but have changed to suit the family. I make it with dark chocolate, but it can be made with milk chocolate as well. Also if using dark chocolate it does not matter if you use white and pink marshmallows together.
This recipe came from Campbell's soup and even though its not the real thing its a great and easy recipe for a cold winters night.
I serve with mashed potatoes and vegetables, but would be just as great served on its own.

This is a wonderful egg and bacon pie, soft in the centre, not at all rubbery like egg and bacon pies can be. I made mine in one medium tin, but this recipe is for 2 smaller spring form tins, but next time I will use 2 tins.

I was looking for something a little different for an appetizer to serve at a party. These were a bit of a hit to Tuna and non Tuna lovers alike. I made mine in patty pans and got about 24, but the recipe says to use muffin pans.
N.B. The recipe is for Tuna in springwater but I was unable to list springwater!
