    This recipe came to me by way of the Zaar recipe adoption in February 2005. I've made a few changes to the ingredient list and streamlined the instructions. It is delicious served over pasta.

    Based on a Cooking Light recipe, this has been modified to suit my own tastes. The sweet onions and balsamic vinegar create a lovely contrast in flavors that pair together so well.     An easy, succulent way to prepare chicken thighs and rosemary (or any favorite herb). The thighs are compressed while cooking, making them very tender and flavorful. I use a springform pan with a large, foil-wrapped rock or brick inside to "skinny" the thighs. Recipe is easily multiplied.

I originally made it with chicken thighs but it also works with chicken breasts. Sid dishes I have had it with are asparagus, grilled brussels sprouts, curry couscous and rice pilaf. 5 minutes to prepare, 30 minutes to marinate. "Mmmm, those are great thighs!"
