The Summer Crockpot

How can I use my crockpot in the summertime? This was the question I asked in a recent forum and just see the great responses I've gotten!! My thanks go to the wonderful zaaristas who responded. I've also found that Judith Finlayson in her book "The 150 Best Slow Cooker Recipes" recommends the following summer uses: soups that are to be served cold, vegetable accompaniments for bbq-ed meats, and desserts. I have added a few recipes I've found that meet these criteria, also, and be sure to check out my Crockpot Desserts cookbook. Naturally, if I have left out any recipes you think belong here, I hope you will tell me so that they can be included!

This recipe was given to me by my friend Sherri. I have sometimes roasted the veggies before adding them to the pot, and I usually add the 6 cloves of garlic, but that is optional if you don't like garlic as much as I do. If I can find good fresh tomatoes, I use those instead of the canned ones. I also take the seeds out of the jalapenos, as my kids can't handle the heat but love to eat it. I hope you enjoy this dish as much as my family does.

I love the impossibly easy pies. They are so easy to put together and bake up to be delicious. I think they make a fine summer meal, even if you do have to use the oven to make it. This is a basic recipe that you can vary any way you wish, depending on what is in the refrigerator. I used sauteed onions, cooked asparagus and Cheddar cheese (being inspired by Chef Silky's Asparagus Cheddar Quiche.) Cooked meat may be added along with the vegetables, if desired. I'm not positive but I think the recipe comes from "Frozen Assets."

I like to make a batch of this overnight to use in whatever I'm cooking the next day. The smell of the onions slowly caramelizing overnight lends to very sweet dreams!

This is an easy and great side-dish for a casual summer function. The recipe comes from Gooseberry Patch who calls it one of their more popular recipes.

I have also made this with a mixture of carrots and parsnips worked well.

If you don't have sun-dried tomatoes in your cupboard add a cup of finely chopped seeded fresh tomatoes for a slightly different flavor

Beat the heat and keep your kitchen cool by serving this delicious and creamy potato dish to go with your grilled dinner. This is one recipe where I break my "no canned soups" credo. It's just too good to pass up. This recipe is from BHG's Slow Cooker Book.

I made this recipe last year for Thanksgiving. It's very good and saves a lot of time. You may have to lengthen your crock pot cooking time.

This is the best creamed corn I've ever eaten. I got the recipe from the Rival Crock Pot book. Its different than the usual can of creamed corn. Much better and probably more fattening, but that's what makes it so tasty!

Recipe #77994

I had this at a friends house recently and it was so good, I had to get the recipe from her. She served this with grilled bratwurst and it made for such a nice meal.

Recipe #85918

These make a wonderful side dish to almost any meal.

I don't remember where I got this recipe, but it has become one of our favorites. You can cover any leftover potatoes and refrigerate or freeze. Reheat quickly in the microwave, adding a little milk for desired consistency.

This is a crock-pot method for my aunt's macaroni and cheese. I use a Rival 5 Qt Crock pot, and have successfully doubled this recipe without changing the cooking time.
