    These are my recipes that are lower in carbs. They may not be lower in fat, though. You will be able to substitute splenda for the sugar in many of these.

    My BF saw something like this on Rachel Ray's show. She didn't remember the recipe exactly and we couldn't find it on the internet so this is what we came up with and it's awesome! We love it on grilled burgers, cheese steak sandwiches and steaks. The dijon adds something really special to the onions. I also make this with spicy brown mustard and love it that way, too.

    Ok, it's not as good as the regular stuff but it's close. It's WAY LOWER in carbs than regular buttercream icing so it allows me to go ahead and indulge in a little treat. This makes enough to do the top of a 13x9 cake or a 7 or 8 inch 2 layer cake. If you're making more than 2 layers or you're making a 9 inch cake, double the recipe or you won't have enough.

    These are much healthier than fried chips and they taste great. You can vary the flavor by using different spices. Try taco seasoning, garlic, cinnamon... the variations are endless. We like them with just salt and pepper. The thickness you make them will greatly effect the baking time. If you do them with a vegetable peeler, they'll take about 20 minutes. If you slice them in super thin slices, they'll take about 30 minutes. Just watch them until you get them just right.

    This is sooo easy to make, and everyone thinks you spent a lot of time making it. The cooking technique is what really makes this recipe work so well. You'll probably end up using this technique a lot; I sure do. (I made Kittencal's Easy and Delicious Ranch-Parmesan Chicken this way and it was amazing.) OK, back to the recipe; I use only 1/2 as much butter as the original recipe called for but I am posting it exactly as I received it. I think 2 tablespoons butter is plenty but you judge for yourself. So, keep in mind that you can cut the fat considerably by reducing the butter. I also use regular 1 or 2% milk instead of half and half when that's all I have around. It always comes out delicious. You can use this recipe for pork chops, too.

    It's okay, you can eat this! It's at least 1/2 the carbs of other cheesecakes, NO SUGAR added and nobody ever knows. I used to argue with guests who didn't believe me that it was low carb, now I don't even bother telling them. They never can tell so why should I? It's absolutely delicious- you'll love this one.     This is amazingly good! It's perfect for a special occasion (like Valentine's Day) or when you just have to have something sweet and yummy in a hurry. There's no baking or complicated stuff so you can literally put this on the table within a few minutes. I top mine with strawberry topping but you can use any flavor you like. It can be made with sugar, splenda or even stevia. You can used regular or reduced fat cream cheese. I use reduced and splenda. It will actually serve up to 4 adults if you really want to share it.

    Here's one of our favorite ways to use up all that zucchini and yellow squash we have in the summer without heating up the whole kitchen. Serve this over your favorite pasta or egg noodles. It makes 8 servings which is twice as much as I need for my family so I freeze the other half in a big ziploc bag. It comes out of the freezer almost better than it was to begin with!

    I love this tangy lemon flavored sauce. It's quick, tasty and light. I serve it on a bed of buttered spaghetti or rice for my family. I'm a diabetic so I serve mine over spaghetti squash or zucchini. It's just perfect either way. You can use this recipe for chicken as well, just substitute 2 large chicken breasts, cut in half to make 4 thin fillets.
