This is a low-maintenance dish, quick & easy, especially if you prep the chicken or even the whole casserole the night before. I also like to make this with Thanksgiving leftovers, but it's good any time of year you have leftover poultry. I also improve the nutritional value by using low-fat, low-sodium, and whole-grain products whenever possible or by substituting homemade ingredients.

Also would make a good sandwich. ***NOTES*** 3/1/2009, I just saw this recipe printed in a new magazine and they now have you add one tablespoon of flour to the crushed French Fried onions. It helps the pieces adhere to the chicken better. 10/19/2010, one of the reviewers offered a new tip: substitute a flavored mustard for the egg if you enjoy the tanginess of mustard. Great idea!

    I think I got this from Family Fun. A great kid friendly meal. I made this with a cooking class of kids grades 4 and up and they ALL loved it. The sauce is great with other stuff too. Finger friendly too! The fat grams will be less than stated, because you won't use all of the dip.

    A different way to cook chicken that is very versatile. I have it pictured here on top of a salad of mixed baby greens, blue cheese, dried cranberries and pecans. Topped the whole thing with raspberry vinegarette and wow! It is also very good on it's own, or even on sandwiches the next day. Fabulous!!

    This is a great, light pasta dish with very little oil. Please note to adjust the cooking time if using pasta other than spaghetti. I often omit the olives due to a daughter that doesn't like them and it's still fabulous. You can also adjust the amount of red pepper flakes to your liking. Another variation is to use cherry tomatoes, halved instead of regular tomatoes. My family really enjoys this dish, hope you do too!!
