Serve this for dessert or arrange it on a leaf of butter lettuce as a salad. I made this and served it over baby spinach leaves. I'm not a big fan of feta cheese, for me a little goes a LONG way. So I made an extra side of the dressing and poured it over the fruit, and used freshly grated parmesan cheese instead. From Eating Well magazine... NOTE: Prep time is cooking time.

    Recipe #324270

These are very similar to the steamed potatoes my mom 'Mimi' used to make in the cast iron skillet. I like to make these with any roasted meat - just put them all in the oven at the same time - set it and forget it !! I use Pyramid All Natural Mediterranean Salad Herb Seasoning for this dish - I find it on the spice aisle at the grocery.

Sun-dried tomatoes are a favorite of ours, so this dip was a must. You can buy herb-flavored goat cheese and experiment with different flavors. Served on 1 melba toast round = 2 points.

Fresh summer tomatoes shine when simply adorned with flavored feta, parsley, and olive oil. From "WW 5-Ingredient-15 Minute Recipes" and = 2 points. NOTE: I've shown some optional ingredients that we enjoy with this dish; I add a pressed garlic clove sprinkled over the tomato, and include thin onion slices.

Quintessential Greek flavors - feta, lemon and dill - combine perfectly in this hearty salad. To complete the Mediterranean mood, try pairing it with a Greek Retsina or a Portuguese Vinho Verde. We love how roasting brings out the sweet flavor of beets. Golden beets look especially pretty when tossed with the fresh herb and lemon seasoning mix, but any type of beets will work in this recipe. If you’re a lemon lover, be sure to add the squeeze of fresh lemon juice after the beets are roasted. Posted for my DH -- he loves his beets!
