    This is one of the best Thai salads I have ever tasted and I just had to share it with my zaar family. Try it, you won't regret it. You can substitute the beef with the same amount of Pork fillets, chicken breasts or thigh fillets, or some firm tofu. When preparing this salad in advance, cook the beef, prepare the salad, and make the dressing, BUT STORE EACH IN SEPARATE CONTAINERS. Do NOT combine until you are ready to serve. This is an ideal portable lunch or picnic dish that can be transported in 3 small containers, and assembled on the spot.

    This is our version of the hot and sour soup, modified to taste as much as possible like the wonderful version we would get at our favorite Thai restaurant, Bahn Na, in Ypsilanti, MI. I've included the modifications (*) that make it vegetarian-friendly.     Fresh lemongrass can be found at Asian markets, specialty greengrocers, and at many supermarkets. If unavailable use dried lemon grass (soak in hot water for 20 minutes). Or use 1 teaspoon grated lemon zest. Taken from Steven Raichlen's "Big Flavor Cookbook."

    I decided to enter into the dark, scary unknown! Thai food! I have seen pictures, smelled the aroma, read, or tried to read some of the recipes. Didn't work! It's still scary unknown.I bought the ingredients, prepared them, rolled up my sleeves, and went to it! Then a funny thing happened, YES! it was delicious! Now, I wondered why didn't try this before? Now, I'm going to get my feet wet in another scary unknown! Enjoy! You might want to add the red pepper flakes slowly, and taste before you add more. The pepper flakes will even be hotter the next day, so be careful. If you have trouble finding the lemongrass, ask your produce man to stock it. Asian markets will have it also. There are lot of steps here, but so well worth it. Times don't include time for marinating.

    Green curry paste can be pretty fiery. If that's appealing to you, lay it on! If not, use just a little, or try red or yellow curry paste instead. These are somewhat milder--though in no way bland--and they're becoming more and more available in the Asian section of supermarkets. Serve the curry with steamed jasmine or regular white rice. Also great with added chicken or shrimp. Food & Wine Magazine. Wine: An off-dry gewürztraminer from the Pacific Northwest is a good choice to both accentuate the curry spice flavors and tame their heat.
