A fabulous summer meal, marinade the meat and make the dressing the night before then throw dinner together FAST. Excellent for casual dinner parties and dieters. I've had this mouth-watering salad at a couple of different Thai restaurants, I was unable to find a recipe so I combined several to make my own. This salad is very spicy yet the bursts of freshness from the lime and mint make it a celebration for the taste buds. It's extremely addictive and very healthy, no oil!

    Recipe #89570

This makes a nice accompaniment to a curry or stir fry. It can be very spicy depending on the type of chili sauce and pepper/chili used, so taste often if you are sensitive to hot foods. I like to use the seedless cukes that are about 5-6" long, but any cuke will work (preferably not waxed). The ingredient database did not have the type of cuke I use, so get about 15" of thin cucumber. Time includes 45 minutes marinating.

    Recipe #320717

From Delicious magazine! Serve on jasmine rice.

    Recipe #174520

From Good Housekeeping April 2007. The curry can be adjusted according to taste, amount listed is mild to medium. A splash of fish sauce also adds authentic flavor.

    Recipe #252944

This is a simple and fairly authentic tasting curry. If you aren't able to get grouper or prefer a less expensive alternative, you may substitute halibut, haddock, tilapia, or other firm white fish.

    Recipe #246287

I got this from a friend who adapted it from Vegetarian Planet cookbook. The rice is especially good the next day.
