This is a great way to have baked potatoes ready when you come home. I own two crock pots. In one I have my meat and the other I have a vegetable, some type of side or dessert. You can create a whole meal in a crock pot.

This can also be made in individual servings using a 4" flan tin. It is also delicious with sweet potato or a combination of the two…And for carnivores that can’t do without meat, corned beef crumbled between the layers adds protein.
This recipe is from a PBS telethon cooking show. This casserole is loaded with mashed potatoes, cheese, butter and hard salami, then baked till hot and cheesy! It sounds wonderful. I have not made this recipe, it is a recipe request.
I found this recipe on a bag of baby Dutch yellow potatoes that I recently bought for a different recipe. THIS recipe sounded so good that I changed my menu and prepared this instead. It was a hit with my family. Although it states "baby DUTCH yellow potatoes", I'm sure that this would work as well with any variety of baby potatoes. I haven't tried it with larger potatoes cut down to size. I used fresh lemon juice and I really think that this made the recipe so I can't vouch for it if you use the bottled stuff.

Tastes like summer. If you are avoiding mayonnaise, this is the potato salad for you. Try to find red jalapeno peppers for color, but green is fine too. Adapted from "Everyday with Rachael Ray," Summer 2009. The original recipe calls for grilled or broiled corn, but I skipped this step and it is mighty tasty as is.
Originally from Canadian Living Magazine, these are delicious and easy. They are lemony without being sour, and not too oily. Great with Greek food, or anything really. These take a lot less time to make than similar recipes on this site.
