My mom makes this every Christmas. It's a tradition in our house and now much requested by friends. So since it's in demand by just about everyone we know, she makes 3-4 a year and gives them as gifts. Mom though makes 7 single layer (on the outside bottom of a circular cookie sheet) as a child I was always amazed by this! But this recipe makes 1 cake that is cut into layers. Much easier. NOTES: You must read through the entire directions and have everything set in the final stages of putting it together. It seems like alot of work because of long directions but it's not complicated. I just talk alot and have a need to explain everything. Cook and prep time does not include refrigeration time of 3-4 hours. Also you see sugar twice in the ing - this is not a mistake you will need these diff measurments.

    Recipe #343087

ZWT7, Italy. May use cream instead of mascarpone but that is distinctly Italian. From http://www.macnuts.com.au.

    Recipe #370352

A very easy recipe to make with wonderful orange cranberry flavours.

    Recipe #425818

These are sunny, bright and FULL of amazing lemony flavor! Are are 100% vegan! From: Veganomicon, The Ultimate Vegan Cookbook. This recipe uses rice milk for the cakes and soy milk for the frosting. I have made them using soy milk in BOTH, and they turned out just fine!

    Recipe #287118

"This delicacy only tastes decadent - the cake is so low in fat, you can afford to splurge by adding coconut and a luxurious sauce." --> This is from either Self or Fitness magazine (sorry, forgot which one)...I haven't tried it yet, but it sounds great. You can easily make it vegan by using egg substitute. (Cooking times are estimates).

    Recipe #209318

I found this recipe when I was making a dessert for a group of people who had lots of food allergies. This recipe is egg, peanut, and milk free, and the non allergy people could not tell a difference. This really is an outstanding dessert to be made for people with food allergies, vegetarians, vegans, or people without food restrictions! Warning: Does contain soy and wheat.

    Recipe #308153

A good go to chocolate cake. I've changed this basic recipe to accomodate many different flavours over the years but my favourite is the raspberry. Has been enjoyed by many non-vegans who didn't even know the difference! I got this recipe when I was in high school from a friend. Frost the cake with my Easy Chocolate Icing, recipe # 424521. You can change the jam in the recipe easily, or cook down fresh berries with a little water and thicken with cornstarch and use that instead. I have also doubled the icing and flavoured half with mint extract and used that as the filling.

    Recipe #424757

Dense and Gooey. This cake is decadent with butter and flour, but works well with dairy-free margarine and gluten-free flour! I love this cake glazed with ganache and sprinkled with toasted almonds, or covered with my balsamic strawberries. To be GF, make sure the baking powder is gluten-free- not just the flour. To be dairy-free, make sure the margarine is 100% vegetable/legume-based.

    Recipe #149976

This cake so wonderful served as dessert or with tea. You may omit the orange zest and substitute milk for the orange juice if you like. Use any jam you wish. Raspberry is very good.

Paula Deen is my favorite chef - EVER! If I had to choose another mother, she'd be who I'd pick. This is her son Jamie's favorite birthday cake. I'm posting it here because not only do I want to try it, but I never want to lose it. And if you could see my office, you'd know that if I wrote it down, it would not be found until the day I stopped looking for it. So, here it is, safe and sound for everyone to enjoy.

    Recipe #159040

This is a new topping that I now use on my Chocolate Cream Pie Recipe #323633. It is fluffy and just the right compliment to this wonderful, tasty pie. It makes alot and you may want to make only half of a recipe. Me, I prefer to have it all on my pie...it is so beautiful piled high!!

    Recipe #377216

Coconut milk gives this cake a velvety texture. Canned coconut milk is available in the Asian foods aisle at the market or at the Asian market.

Next best to the original! On our visit to the Caribbean, we brought home the best Rum Cake I've ever had.... in fact it's the very best of all cakes I've ever had!!! I then thought I'd send for some to be shipped to us and found the price to be $35 for the med. size ( I paid $18 on the Island) So my search for the recipe began! You can not purchase Tortuga Rum ANYWHERE except in the Caribbean - Whaler's Vanille Rum should be a close match. This next best copy-cat comes from Newsgroup Rec.food.recipes.
