This is a very showy and tasty cake. If you are not planning to use it all at one time (party or large family) I would recommend replacing the whipped cream frosting with one that will be stable for a longer time but do still add the 1/2 tsp of instant coffee to it. Prep time includes making and assembeling the cake.

I then thought I'd send for some to be shipped to us and found the price to be $35 for the med. size ( I paid $18 on the Island) So my search for the recipe began! I serve these wonderful tea scones with homemade strawberry jam and Devonshire clotted cream and they are the highlight of the afternoon tea I serve my guests. Incredibly easy to make and fast to disappear. I hope you'll try them and if you don't have clotted cream available, serve whipped heavy cream with jam of your choice. Enjoy!
Dense and Gooey. This cake is decadent with butter and flour, but works well with dairy-free margarine and gluten-free flour! I love this cake glazed with ganache and sprinkled with toasted almonds, or covered with my balsamic strawberries. To be GF, make sure the baking powder is gluten-free- not just the flour. To be dairy-free, make sure the margarine is 100% vegetable/legume-based.

I have added walnuts or chocolate chips or white chocolate chips to this recipe just to change it up once in a while. 1/4 cup of each is all you need.
This is the pie that captured my DH's heart! This is a great recipe that uses only 1 pie crust. I recommend using a deep dish pie crust to minimize spill overs.

These light, fluffy pancakes make a delicious breakfast treat paired with lingonberry or raspberry jam. Be adventurous, sub out the blueberries and try chocolate chips, diced bananas, raspberries, etc.... My Fav? Banana/Walnut.
A favorite combo of flavors, these muffins resemble crumb cakes when made with streusel. The topping makes alot so you can use more for later or cut the topping in half. Update: I have made a few changes to make this even better!(Thanks Realtor!)
A good go to chocolate cake. I've changed this basic recipe to accomodate many different flavours over the years but my favourite is the raspberry. Has been enjoyed by many non-vegans who didn't even know the difference! I got this recipe when I was in high school from a friend.

You can change the jam in the recipe easily, or cook down fresh berries with a little water and thicken with cornstarch and use that instead.
I have also doubled the icing and flavoured half with mint extract and used that as the filling.
