    Mamaw's Creamed Turkey over Toast
    Handle

The day after Thanksgiving you can achieve the very pinnacle of comfort food! My mom ended up having to bake several turkeys a year just so we could get this stuff. Some very knowledgeable 'Zaarites helped me to ressurect it as the recipe had been lost.

    Recipe #145936

    Select
    Down Home Turkey Stew
    Handle

A comforting and delicious "stew" or "soup" (Depending on whether you thicken it or not) that our family has been enjoying for many years. I hope you will enjoy it as well. :) Because the onion soup mix, steak sauce and the beef base contain so much sodium I do not use extra salt in the recipe. You may do so if you choose but please taste the "stew" first before salting. Ground beef can be substituted for the ground turkey.

Chicken or Turkey Enchiladas with Sour Cream

These rich and easy enchiladas come from Sunset's 1969 cookbook favorite recipes 1. To save more time on this time saving recipe you can buy the already grated cheese. Use your favorite red or green salsa.

    Recipe #81908

    Select
Macadamia Turkey Salad on Cucumber Slices(Diabetic)
    Handle

From Better Homes and Gardens, Special Interest Publications, Diabetic Living, Spring 2005. This salad, atop a slice of cucumber, makes a nice canape. Good use of leftover turkey!

    Recipe #128179

Open-Faced Turkey, Cranberry & Apple Sandwiches
    Handle

The sweet and salty combination makes these sandwiches a fast favorite.

    Recipe #113343

    Select
Spicy Turkey Samosas With Cranberry and Pepper Chutney
    Handle

Samosa is not a new word for a average American or Canadian like Jamaican beef patties. It is an Indian appetizer known to all. This is a great post Christmas or Thanksgiving recipe Good if you are hosting a New Year's party and want to impress guests with some party snacks. I love it as it is a good combination of spicy and sweet and takes minimum kitchen skills to make.

I love Turkey and I love soup, so there's no way I'm getting rid of that Turkey carcass. This is my basic chicken soup recipe with Turkey instead. The garlic and tomato sauce add terrific flavor and nice color. I'll eat it all year round.

    got leftovers?

    Recipe #77608

    Select
    Turkey Chowder
    Handle

I tried this chowder after an ice skating party, and when I went back for more it was long gone. It is rich and creamy and absolutely melts in your mouth. It is expected and devoured at every family gathering I have, there is never any left over, and always people asking for more.

    Recipe #73348

    Select
    Turkey Tetrazzini
    Handle

Another favorite from The Encyclopedia of Creative Cooking edited by Charlotte Turgeon. This is a good recipe use up, or stretch, that left over turkey. It's a good make-ahead dish too, as you can put it in the fridge and then cook it later that day, or the next. This last time that I made it, I was unable to get the sherry called for by the recipe. I substituted a rose, and while the taste was a little different, it worked just fine.

    Recipe #79729

    Select
    Turkey Turnovers
    Handle

This recipe is outstanding and so easy to make with any leftover turkey you have. This recipe is from an old calendar my mom has from the 1960's. She tried it for the first time about 8 years ago and I have been making them after every turkey meal ever since. They are great as small appetizers or make them larger and have for lunch. I am not great at making pastry of any kind but this one always turns perfect. The prep time for this recipe also includes the 1/2 hour it takes for the dough to chill.

    Recipe #105168

    Select
    Turkey Hash
    Handle

A good use for turkey leftovers--I've made this after Thanksgiving for decades. Amounts are approximate estimates. Nowadays I often cut the butter to 1 Tbs or just use nonstick cooking spray in place of butter.
