This is a recipe fron Kenya. There are a few ways to prepare Red Beans in Africa and different areas seem to prefer different seasonings. The coconut milk in this recipe is the traditional way to make your own, but you can substitute canned to save yourself the trouble. You can also substitute canned kidney beans for the dried. I received a package of this as a gift and loved it so much I asked for the mix recipe too. Unusual use of ingredients but turns out a nice cookie. Mix makes about 4 cups of mix. Prepared you receive approximately 2 - 2 1/2 cookies total.
I like to do the first and second step the night before, so I can put it together quickly the next morning for a hearty breakfast. The 30 minute baking time is the perfect amount of time for me to get a shower and dress for work, making this work for a weekday breakfast. Usually I half this recipe to serve 4 instead of 8, except over the holidays.

You can find the chili oil on the ethnic aisle of your grocery store, or make your own by putting dried red chile pepper pods in oil and letting it sit for a couple of weeks. Prep and Cook time does not include the 8 hour chill time!

This produces a delectable chip and nut cookie. Though the combination of nuts can be altered, as well as the type of chips (milk, semi-sweet, white), the one thing stay true to the recipe is the addition of the liqueur.
This is the recipe that has been in our family and now my sisters and I all make this each Christmas. Could be made for any holiday!!! We then make a buttercream frosting and divide it into different bowls and add different colored food coloring drops to them. My mother always made the dough and cut out the cookies and baked them. The kids all got to frost and decorate them together. Hope you and your family enjoy them. NOTE: Time doesn't include chill time required to make dough workable.
