A recipe from www.celiac.com that I have altered slightly. If your flour mix does not include xanthan gum, add 1 T of ground flax seed (although you may add it anyway as the outcome of the recipe won't be affected). It is also very important to chill the dough before you bake them - they won't spread as much. NOTE; If you are making this recipe as a non-gluten free recipe using regular all-purpose flour, do not use quick oats as the recipe was made with regular long cooking oats.
I don't even know where I got this recipe. It tastes wonderful on vanilla ice cream and is very easy to make. If you are concerned about using corn syrup this recipe works equally well using honey as a substitute.
I found this recipe on another website where people post recipes that are WW friendly. I decided to try and make it gluten-free and they were just delicious. This recipe makes 6 - 4 pancake servings and the WW points are 6 per serving.
This is a recipe that I got from the website of Gluten-Free Goddess. It uses Pamela's Baking & Pancake Mix. I've made it several times and I've gotta say, it's really good. My wheat eating DD even asked for it for her birthday. If you are GF/CF you can use canned pumpkin or applesauce in place of the yogurt and 2 cups of your flour mix plus 2 teaspoons of baking powder and 1 teaspoon of baking soda.
This is a recipe I found in a dairy free cookbook. I converted this when my daughter was little and had several allergies that we had to adjust for. This recipe is not gluten free or dairy free as posted but can be made dairy free by using milk-free margarine.
This is a remake of another GF cake that I posted that uses Pamela's Pancake and Baking Mix. Since posting this recipe I have discovered that I am also allergic to vegetable gums so I can no longer use any of Pamela's products. So I took recipe #250551and adapted it.
Other than the fruit, the sugar content of this recipe is very low. You may use either fresh or frozen fruit. If you use frozen fruit, it does not need to be thawed. If you don't have a tart pan use a 9" round cake pan.
