I often get a lot of comments about these mini fruit puddings but I never give my secret away (I'm actually cheating). I don't use alcohol so I use cranberry Juice. Fun for the kids to help. This recipe was given to me from an old work mate. Thanks CC.

Lovely light dessert. Replace apricots with any fruit you like--either fresh or canned. Match up the colour of fruit with jelly and yoghurt (keeping the same quantities as with the apricot recipe). Not sure how long it takes to chill.

New York is apple country and this cake recipe is courtesy of the state's apple growers group. I am tucking it away to make for Thanksgiving but thought I would share it in the meantime. My own version will probably include less sugar as we don't like things quite so sweet. Please note the preparation time include an hour of soaking time.
