Sunday's Special: (Roast) Chicken!

Almost every Sunday we roast a whole chicken. In the hotter months, we prepare either skillet chicken or salads with leftover chicken. We've tried French, Greek, Algerian, Cajun, Lebanese, Saudi Arabian, Chinese, etc. I'm always on the hunt for good roasted chicken recipes (rubs & marinades, too!) using quality ingredients. Moroccan Roast Chicken. As found in my copy of 'The Arabian Delights' cookbook with one or two minor changes. Chicken (parts) can be broiled, baked, grilled or roasted (on a spit/rotisserie).

From 365 Ways to Cook Chicken. For this recipe I substituted chestnut flour I found last month in bulk at the local natural food store. The original recipe called for whole wheat flour. I added the onion and garlic powder and dried parsley to make it more palatable and agreeable to a five year old. The test recipe was cut in half.

From the Associated Press. I cheated and bought boneless/skinless chicken pieces (breasts, and thighs) instead of a whole chicken and I replaced some of the kosher salt with a small amount of smoked salt. Easy for summertime cooking!

Recipe from a local source: "Chipotle Chicken was adapted from a tiny village cook in Oaxaca, Mexico. The wet rub can be used equally well on thick fish steaks or large whole fish, such as snapper." Adapted by me from my copy of '365 Ways to Cook Chicken' cookbook and several online recipes. I used both green and red grapes for added color. These Chinese style wings will definitely become a fave! Everything is prepped the day before, so all you have to do is pop them in the oven. They are great served with a cheesy potato casserole and fresh green salad. No need to worry about the leftovers because they are great when eaten hot or cold.

Tasty, quick version for oven roasting. I sometimes use half chili powder & half ground habanero powder to kick it up. Adjust any flavourings to your preference.

I searched and finally found this recipe on the internet. It is a copycat of the Bourbon Chicken sold in Chinese carry-outs in my hometown. This recipe is so good that my sons gobble it up leaving me just a spoonful. Their excuse was they thought I had eaten. Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

The cranberry- Dijon mustard sauce was originally a dip recipe found on oceanspray.com and switched to a sauce for chicken. Recipe #188835 is identical to the way I prepare homemade cranberry sauce. Feel free to make this if you think you might like it, or maybe make some adjustments to it, but I made it as it is posted and I didn't like it. I love agua de tamarindo so I thought this might be good, but turned out not to be what I thought. Just FYI!
