Sunday's Special: (Roast) Chicken!

Almost every Sunday we roast a whole chicken. In the hotter months, we prepare either skillet chicken or salads with leftover chicken. We've tried French, Greek, Algerian, Cajun, Lebanese, Saudi Arabian, Chinese, etc. I'm always on the hunt for good roasted chicken recipes (rubs & marinades, too!) using quality ingredients. If you have a recipe that you feel needs to be in my cookbook, send me a Zmail and let me know! Photo by French Tart

Moroccan Roast Chicken. As found in my copy of 'The Arabian Delights' cookbook with one or two minor changes. Chicken (parts) can be broiled, baked, grilled or roasted (on a spit/rotisserie).

Recipe #503960

From 365 Ways to Cook Chicken. For this recipe I substituted chestnut flour I found last month in bulk at the local natural food store. The original recipe called for whole wheat flour. I added the onion and garlic powder and dried parsley to make it more palatable and agreeable to a five year old. The test recipe was cut in half.

Recipe #492061

From the Associated Press. I cheated and bought boneless/skinless chicken pieces (breasts, and thighs) instead of a whole chicken and I replaced some of the kosher salt with a small amount of smoked salt. Easy for summertime cooking!

"This is a delightful, simple dish that will fill the neighborhood with a gorgeous scent". Both outdoor grilling and pan grilling directions are given in the directions. Serve with your favorite grilled chicken sides or if you want to maintain the Middle Eastern theme serve with tabbouleh, baba ghanouj, yogurt dip, Arabic bread, etc. as a suggestion. We enjoyed the chicken with these sides: yogurt dip consisting of cucumbers, rose water, salt and mint; Recipe #475009, and fresh steamed plain green beans. From the book The Language of Baklava (page 79) by Diana Abu-Jaber.

Recipe from a local source: "Chipotle Chicken was adapted from a tiny village cook in Oaxaca, Mexico. The wet rub can be used equally well on thick fish steaks or large whole fish, such as snapper." This recipe reminded me of another one on the Recipe #29448 posted by Mirj. I "borrowed" the breadcrumb coating idea and it worked well. Looking for an almond meal recipe?: Recipe #409064

An easy , quick and tasty meal. A family favourite

Recipe #151097

Adapted by me from my copy of '365 Ways to Cook Chicken' cookbook and several online recipes. I used both green and red grapes for added color. Serve with simple sides such as saffron rice or roasted new potatoes; lightly steamed seasonal vegetables or an uncomplicated mesclun salad. Elegant yet easy main dish!

Recipe #456953

Chicken breaded with panko crumbs, can sub boneless skinless chicken thighs for the breasts, just adjust cooking times.

Recipe #441298

A variation on the classic _coq au vin_ using Riesling instead of the traditional Bordeaux. Adapted from a recipe by Kerry Saretsky at Serious Eats.

Recipe #439065

Tasty. Chicken with spiced yellow rice & a nice tomato sauce or if you are tomato free serve it with Recipe #359835 used to replace the tomato puree. Modified from

This is a really tasty Korean chicken dish. It reminds me of the teriyaki chicken you can get in the mall, but spicier! I modified this from "A Korean Mother's Cooking Notes." prep time does not include marinating time.

These Chinese style wings will definitely become a fave! Everything is prepped the day before, so all you have to do is pop them in the oven. They are great served with a cheesy potato casserole and fresh green salad. No need to worry about the leftovers because they are great when eaten hot or cold.

I got this from a friend, it is to die for! I love to serve it with jasmin rice and steamed broccoli.

Tasty, quick version for oven roasting. I sometimes use half chili powder & half ground habanero powder to kick it up. Adjust any flavourings to your preference.

I searched and finally found this recipe on the internet. It is a copycat of the Bourbon Chicken sold in Chinese carry-outs in my hometown. This recipe is so good that my sons gobble it up leaving me just a spoonful. Their excuse was they thought I had eaten. Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

The cranberry- Dijon mustard sauce was originally a dip recipe found on and switched to a sauce for chicken. Recipe #188835 is identical to the way I prepare homemade cranberry sauce. I try to keep a bag of frozen whole cranberries on hand for these type of recipes. Super easy for a weeknight meal.

Recipe #416915

Stunningly easy but really impressive recipe! Simply marinade the chicken breasts in the sauce & pan fry them for an elegant but simple supper! Serve with rice, pasta or a medley of fresh seasonal vegetables with steamed new potatoes. This is one of my "fail safe" recipes - it is also brilliant on the Barbeque or oven baked! Also great with roasted Cherry Tomatoes. You can also use lean pork chops for this recipe.

Recipe #176182

For subtle variation, add some fresh herbs or spicy paprika. Simple and delicious. Turns out perfect every time. The flavour comes from the combination of bread crumbs and potato flakes.

Found this on an asian cooking website. When I originally posted this recipe, I had never tried it. Well, since then I have tried this recipe and must say I was not very impressed. Feel free to make this if you think you might like it, or maybe make some adjustments to it, but I made it as it is posted and I didn't like it. I love agua de tamarindo so I thought this might be good, but turned out not to be what I thought. Just FYI!
