    On a search for gluten free desserts, I stumbled across this gem on the Land O'Lakes website. Everyone at the party - both the gluten intolerant and the gluten eaters - loved it, and I have made it several times since then. It is creamy and delicious, and perfect for the summer with the berries and the low cook temperature. Instead of being on top of the pie, the meringue serves as the crust! The cooking time includes both the active bake time (1 hour) and the time the crust needs to sit in the oven (45 minutes), but does not include the 2 hour minimum time the pie needs to firm up in the fridge.

    Call it a cake or a quick bread, either way it's different and delicious. I adapted another of my recipes (Honey Spice Cake) to come up with this flavorful loaf. You will need to make Zany Zesty North Africa/Middle East Spice Mix #428327 (I skipped the sugar and salt in it) for the spice used in this, it doesn't take more than 5 mins and that included gathering the ingredients onto the counter and it is what makes this recipe what it is. Get ready to enjoy the wonderful baking aroma!

It was very good. Next time, we might try either diced tomatoes or breaking up the stewed tomatoes more because the tomato chunks were quite large. This was very easy to make. I used fresh Parm.
