Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

    Recipe #85629

We usually make this as a side dish to any meat dish; goes well with all really .

A roasted Portugese side that is delish.

    Recipe #369959

This sounds like it will be good, with sweet potatoes and brown rice. I might make it with couscous or quinoa as well. From cooking light. cal - 200, fat 2.5g (sat 0.4) Carb 38.8 Serve with pork chops, roasts, chicken.

These potatoes are a staple in our home. Whether accompanying roast lamb or chicken, or just on their own, we have them a couple of times a week. They are delicious and the ones that get overly-brown in the pan and stick a bit are MINE! Clean up is a little tricky with this recipe, unless you line your pans with foil, but I find that just filling the pan up with hot, sudsy water and forgetting for an hour (something I apparently have no problem doing ;-)) helps a lot.

This is a very tasty, yet simple dish to make. Garden grown squash are by far the most flavorful to use but depending on the season whatever available will be fine. It has been a favorite in my family for years. Hope you enjoy it as much as we have!

    Recipe #419016

My grandmother used to make this and everyone loved it! I make it often for my family and, even though most of them don't like squash, they always ask for seconds of this casserole! Tip - add cheese to the mixture as well as the top to make a creamier casserole. Prep time is a guesstimate!

    Recipe #442264

This is a delicious recipe to use up your crop of summer squash, even people who hate squash like this recipe! When I made this I added in about 2 teaspoons fresh minced garlic, but that is optional. You can cook the squash hours in advance.

Got from a magazine while browsing, this was the prize winning "Weeknight Vegetarian" recipe.

    Recipe #451252

This bakes up into a rich corn bread!

Lemon, fresh oregano, and feta to brighten up potatoes-leave skin on or off. Serve alongside grilled fish, steak, or chicken with a tomato salad. Leftovers would be good, too. TY Just Jan for helping me improve this recipe. :)

    Recipe #425860

I found this recipe in a Better Homes & Gardens magazine submitted by Kelly Thornberry,it was a $200.00 prize winner.

This is similar to alfredo but not nearly as heavy. I found this in a magazine while on vacation at the St. Lawrence River years ago. My now married daughter is coming home for a few days and has been asking me to make this again. Well, it took a few hours to "unearth" this recipe so here it is where I can find it again quickly next time!

    Recipe #180968

This salad is so amazingly good. I'm totally addicted to it. It looks (and tastes) like something you'd eat in a restaurant. I know, you're thinking spinach with noodles???? But it is SO good. And don't let the long ingredient list scare you. Trust me it's worth the chopping. If I'm making this just for our family, I cut up all my veggies and put them in ziplock baggies. Then I make the dressing and the noodles. I keep all of it in the fridge and just pull it out as much as I want and enjoy the salad 2x in one week! I found it on Pioneer Woman's website (adapted from Jamie Oliver's version) and adapted it to my taste. As a side salad it probably serves more like 8 - 10. But if this is all you're eating then it will serve 4 - 6. It looks like you've got this huge salad and how is it all going to be eaten and then all of a sudden it's gone and people are asking for more!!

My boyfriend is crazy about stuffing and I have tried to find as many ways as possible to incorporate it into dinner. This is great for a weeknight dinner or can be doubled and used for a holiday dinner.

From Cooking Light July, 2009. I have been looking to include more quinoa in our diet since it is low calorie and very filling and this recipe turned out to be easy and a hit with everyone in my family. It is delicious! Here is what Cooking Light says about it: Quinoa is a quick-cooking whole grain supplying protein, iron, and vitamin E. Pair this side dish with simple grilled chicken or fish. For a vegetarian entree option, use organic vegetable broth and add one can of rinsed, drained chickpeas to ramp up the protein even more.

You gonna' dun like diss, I garontee! :)

    Recipe #34011

When I make this recipe I put lots and lots of Parmesan cheese in it and I do not put it under the broiler. I even make it the night before serving. Excellent. This is from a wonderful restaurant in Fullerton, California who gives out the recipe on postcards. Everyone asks for the recipe when I bring it to dinners.

    Recipe #42382

I actually won a cash prize in our local paper for this recipe. My husband and I will eat the whole thing ourselves - make several if you're having guests. If someone you love doesn't care for cauliflower, this may be the ticket!
