    Portland, Oregon is not supposed to get hot. Everyone says it doesn't get hot. They lied! So here are some recipes for summer's bounty, many of which don't involve too much cooking.

    I needed a recipe that would use a bunch of veggies harvested from my garden, so I came up with this refreshing orzo salad that is both colorful and crunchy. A very refreshing vegetarian salad for those hot summer days.

    This recipe is a (very) slightly adapted version of a recipe from Real Simple magazine, Jan. 2009. It was voted No. 9 in a list of readers 50 favorite recipes! It is delicious and SO easy! Buy your salmon fillets fresh (with skin) and you won't get that fishy smell at all! I baked the salmon when I made this recipe, but I have also included instructions for grilling outdoors. The cedar plank adds a wonderful, smoky flavor. It should be 7 x 14 x 1/3 inches. I found cedar planks in the meat department of my local grocery store. You must soak the cedar plank in water for no less than 30 minutes before use. Prep time includes soaking time.

    This is a great appetizer to make now while basil is plentiful and stash in the freezer to use all year. I pull one out of the freezer when I need something quick for a dinner party appetizer or potluck. Use 6 or 10 oz custard cups

    I love homegrown tomatoes, and while they are in season, this is a yummy side dish. Courtesy of Rachel Ray. Update to recipe: After cooking for minutes, I gently mixed, then cooked for 10-15 minutes longer. Then topped with parmesan and put under broiler to melt cheese and toast. Also recommend lightly toasting the baguette prior to cutting into cubes, then rub with fresh garlic before mixing with tomatoes.
