    I've been hanging on an old magazine recipe clipping for years. Finally, I made this recipe and, WOW, it's great. I used jumbo strawberries, but you can also use regular-size strawberries. Serve an appetizer or a dessert! The filling is not overly sweet, and you can add powdered sugar to taste if you want a sweeter cheese mixture. I've found that there's more than enough filling for 12 medium-large strawberries. If you don't have time to pipe the filling, you can serve it in a bowl as a dip.

    This cake is really easy to make, especially if you buy a ready made sponge. In the UK we can buy ready made 'sponge flan' cases but I just make my own for this. The filling is more luxurious than plain old whipped cream and easy to whip up too. If you do the hot skewer thing and can make spun sugar to go on top, you will have an elegant cake with a 'wow' factor. If, like me, you are useless with the sugar, a few strawberries on top will still be beautiful. Recipe adapted from James Martin's series 'Sweet Baby James' on the BBC.

    A different cream/meringue ring that is filled with fresh strawberries - you can make the ring ahead as it needs to be frozen until firm. The Cointreau can be replaced with brandy or even orange juice if you prefer. You can also mash up a few strawberries and add these to the meringue mixture before freezing. If you can’t find meringues and prefer to make them, I use my recipe ‘Cream Meringues’ #122793. (Time to make does not include freeze time or making meringues.)

    From a cookbook called "No Jacket Required" put out by Neiman Marcus and the recipe was contributed by Virginia Kopacz Valley from California. She said that this recipe was made by a restaurant in Innsbruck, Austria, called Kapelles. She and her husband had it on their honeymoon. I included chilling time in the preparation time.

    I found this delicious recipe in 'Chef John Folse's Plantation Celebrations', the cookbook I received from Luby in the latest cookbook swap. These are really quick and easy to throw together but don't over beat the dough. If your strawberries are very ripe you may want to sauté them in the oil before adding them to the milk/egg mixture. That will keep the muffins from being soggy. This recipe makes 12 regular sized or 6 large muffins.

    Most summers I enjoy going strawberry picking at a "U Pick". The Blue Diamond Berry Farm is one of these U-Picks and they hand out recipes you can make with strawberries. This is one of these recipes which is a nice variation from the regular matrimonial cake made with dates.

    A refreshingly different salad, we can buy Stilton with black pepper here, but you can use any Stilton or even leave it out if you prefer. I make half the amount of dressing as I find that this is enough. Recipe adapted from Rococo Real Chocolate Book by Chatal Coady.
