Diabetics don't have to give up desserts! This is low in sugar. If you don't want the sugar in the Craisins, rinse them a little in cold water and drain. This removes some of the sweetener on them. Or use raisins instead. Dry buttermilk powder can be found in the baking section of the store. It is great to have on hand for baking. This was adapted from a recipe in "Desserts for Diabetics", by Mabel Cavaiani. NOTE: This is a low-rise cake, like a snack-cake or brownie.

These are moist and full of berries. I found in my GI diet cookbook; a great healthy snack!

    Recipe #268722

This is a rich creamy frosting that is easy and delicious served on Pumpkin, spice or carrot cakes. I make this recipe all the time so I had to include it in my recipe collection.

    Recipe #192019

I like to serve it with a scoop of icre-cream in cinnamon or sweet-cream flavor.

    Recipe #230117

This is basically the recipe from the back of the Toll House bag, but I tweaked it so that it would have less fat and fewer calories. The addition of applesauce is actually really nice-it blends well with the cinnamon-y, buttery taste of the scotchies. The only thing is that you'll have to increase the cooking time.

Best carrot cake! Carrot cake has very strong spice and the icing is light and fluffy!

This is my lightened version inspired by Kim127's Recipe #57771. I have reduced the fat and sugar content.

YOU WON’T BELIEVE THIS!!!!! I am a diabetic. This is amazing. You will love this lemon pie. Works very well in individual tarts too. Bite sized heaven to serve to guests. I hope you try this. It is low fat, low calorie and low sugar. I find that using both the Splenda and NutraSweet together is cheaper. Do not add the sweeteners until the thickened water is at full bloom and OFF the stove. High heat kills NutraSweets sweetening power.

While browsing a used bookstore with Twissis, I found a little gem called "Simply Splenda Cookbook" by Graham Kerr (AKA The Galloping Gourmet). This book is chock full of low calorie/low fat dishes that he devised to accomodate his wife's diabetic diet. His description " This pie crust is almost foolproof. It has a good flavor, is crisp yet tender and pairs beautifully with crusted dishes. This recipe makes two 9 inch crusts."

    Recipe #235401

This was in the latest issue of Women's Weekly & thought it would be good to add to the Mexican leg of ZWT III. Great to warm you up on a cold winters days!

These cookies are so good, and you can add anything you want into them, such as nuts, chocolate chips, crasins, or just raisins!!!

    Recipe #238738

These are super easy to make, but they look and taste very elegant. Perfect for a healthy snack, or a light post dinner dessert! You can dice the peaches if they are to soft to halve, but they won't look as pretty! :) Enjoy in good health!

    Recipe #238920

These are great lowfat dessert choice!! I have served these at company dinner's to great reviews. You can substitute gingersnaps for the chocolate wafers for a different taste combination.

    Recipe #239349

This came from Fitness Magazine, August 2007. I haven't tried this yet...but it looks healthy and delicious! I substituted Splenda for the sugar in the recipe. Cooking time includes freezing time.
