    Yummy, healthier version of spaghetti! Shrimp and colorful peppers and onions add a summer feel to this dish my mother and I created one night. Quick with microwave, but if you prefer an oven, bake the squash halves at 350 for about an hour or until soft. Capers would make a good addition to this! Spaghetti sauce has great basic taste so it could be a healthier base to any pasta dish. Serves four for a delicious dinner or a side could serve 8-10.

    No, it's not a substitute for pasta. It doesn't taste anything like pasta but it's a very nice squash dish. It saves a great many calories and carbs over pasta. Diabetic diets can become rather boreing and I found this a very nice change. It says it will serve 6 and it might if you use it as small side dish servings. I got 3 dinner size serving from it.

    This is a good basic way to serve this crunchy, mild favored squash. For variety, top with sesame seeds, mix with minced fresh basil, or combined with fresh chopped tomatoes. A 3 pound squash yields about 6 cups cooked squash.

    This is a healthy, quick and easy dish. At least once you split the spaghetti squash in half. The rosemary, sage and thyme makes this side a nice, grounding and comforting veggie. Also the sweet sauteed onions and garlic lends it lots of flavor topped with grated parmesan cheese. Servings are either a side or meal. Once you taste it you will continue on to make a meal out of it.

    There are so many ways to serve this wonderful veggie. I use it in place of pasta. You can experiment with different sauces and herbs to create a great tasting dish. Try it with Alfredo sauce, or add some pesto and butter or your favorite herbs. Look for more recipes I posted for this veggie.

    This was a Rachael Ray recipe a few weeks ago. I made it last night and it was SO GOOD! A few notes, though. She said it takes 45 minutes- 1 hour to roast the spaghetti squash. It took WAY longer. Next time I would start it in the microwave and cook it halfway. Then I would add the olive oil and cheese and finish it off in the oven. Once the squash was done, I spooned in the meat sauce, covered it with a bunch of the grated romano and put it back in the oven to brown the cheese. MMMMMM! Also, if you have a non stick pan, then you don't need the full 2 Tbl of olive oil to brown the pancetta. Prep time includes the roasting of the squash.

    Spaghetti Squash baked mac-n-cheese style! From Sunset Magazine 10/08. I'm posting the recipe as published by Sunset, but I made a few changes that we really enjoyed....I used 1 1/2 cups of the cheese (1 cup mixed in and 1/2 cup sprinkled on top), I used 3 large jalapenos and instead of draining them from the milk I left them in the recipe (nice crunch and color), and I used non-fat milk because that's all we use and I don't think it detracted from the recipe at all. A great comfort food!

    This is a great way to use this healthy squash. Chef's note 9/13: I just changed it up and it worked perfectly. I used the squash as directed and added more carrots (I didn't have bell peppers). I used the broth and soy sauce as well as a heaping tablespoon of spicy black bean sauce. It was so tasty, I put it under a chicken and broccoli stir fry and I didn't need any rice.

    This is a healthy alternative to LoMein and so tasty. I was skeptical when I first made this recipe because there is so little to it but it really has great flavor and is very easy to make.
