I made these for two picky young boys who stayed with us while their dad was in the hospital. It went over so well I had to make another batch! They are also a great item to store in the fridge for snacks or lunch boxes. Eat cold or heat for 30 seconds in a microwave. Hope yor picky eaters like them as much!
Are you craving that great Mexican rice from your favorite taco stand? Here it is. This is just like a good Mexican restaurant rice. Many recipes taste good... but the texture just isn't right. You know how it is... you have prepared scores of Mexican rice recipes but always have been disappointed. It may be delicious but kinda "gloopy and wet." Try this. Everything is pureed and cooked in. There are no chunks of anything... just dry fluffy rice with all the seasonings and just the tiniest hint of a tomato flavor. I will throw away all of my Mexican rice recipes- this is the one I have been looking for for years!
I don't own a rice cooker but some people have had disappointing results using one. You will also need to adjust your cooking time if you want to use brown rice. I recommend following the cooking instructions as directed. Proceed at your own peril if you stray.
Warning: I thought this was nothing more then my bestfriend's favorite enchilada recipe but OH! How we underestimated it! Maybe it's bc we moved away from Texas 2 months ago and we miss Tex-Mex. Or perhaps it was because we usually believe things that arn't hard to make arn't good enough for 2 culinary arts students to waste their time on... but here I sit in my computer chair eating the last left-over enchilada, the enchilada I tried so hard to save for my husband...knowing full well he said he'd divorce me if I ate all of the leftovers. LoL, and Jacklyn, it was totally worth it! JK!
This is an easy, yet very tasty spaghetti casserole, which reminds me of the spaghetti they used to serve us in elementary school. I loved their spaghetti! I normally only brought my lunch, but not on spaghetti day!
This is a staple of Cuba and of course, now of Miami. When you are preparing this recipe be sure to remove any "woody" parts from the center. You can use the frozen yucca or cassava, in place of the fresh. Just follow the package directions but add salt and lime juice to either.
Mildly seasoned. Great for parties, Superbowl, camping, picnics and more! If you can find mini bagel chips, use those. If not, buy the large bagel chips and break them up smaller. If you like the mix hotter, add as much cayenne as you can stand!
This was what I did with some leftover black beans that did not get used last night. It turned out really good. I just made enough for one, but am going to try to post as to use a whole can of black beans--so many possibilities.
A suprisingly moist cake made without eggs or butter. This was a recipe from the Old West Chuckwagon cooks, eggs and butter were hard to find on the trail. This can be used as a breakfast bread as well. Throw in just about everything but the dishwater. Enjoy!
This is so simple and fast! I saw it on the Real Simple TV show. It is easy, of course, simple and it tastes great. Just get fresh salsa from the grocery store and open some cans. Depending on how much or how little broth you add determines whether you use as a hot bean dip or a soup.
This versatile salsa may be refrigerated for several days. It is deliciously refreshing served with grilled fish or shrimp.
The serrano chili is a small (1 1/2 inch long) green chili pepper. It is available canned or fresh. If a milder flavor is desired, remove the seeds of the chili. If canned, rinse under cold water as most of the heat is in the liquid.
