I like using white cheddar instead of yellow. If you use the food processor to grate the cheese, this can be made in almost seconds. Great with crackers or for sandwiches. This recipe is from Whole Food Market.

Da Speech: Crumbled tofu or TVP (textured vegetable protein) may be used instead of vegetarian burger crumbles. Liquid Smoke comes in various flavoring which is stirred in near the end of the cooking time to add a pleasant smoked nuance to the stew. You want Hickory here. You can find it in Wally or natural food stores or even your local general store. Vegetarian Worcestershire sauce, available in natural food stores, is made without anchovies.

This recipe can be made with green tomatoes or ripe tomatoes. Whichever you prefer. The measurements can be altered to suit your own taste. It just depends on how hot or mild you want your chow chow. Yield is a guess. I use whatever size jars I have empty, so I never really know the exact yield.

I have been making these for over 20 years, I usually get about 15 patties but it depends on the size of the batter that you drop in the pan, these are better if fried to very brown and crispy, you can make a double recipe, fry them then freeze them on a tray then pop them into freezer bags, then just warm them in the oven to crisp up, they are very addicting and I can tell you I eat half before they even get to the table lol! I got this recipe from Veggie Life Magazine and it is great. If you use molasses in this recipe, use 2/3 cup coffee and add 1/3 cup water. chipotle chiles are smoked jalapeno peppers, available dried or canned (often these are in adobo sauce). You can find this at Wal*mart or at Mexican markets.
