There are already a lot of fish taco recipes on Zaar. But this one is a little different than the others. I found this recipe on the Internet somewhere. We really like it. I serve it with Recipe #232299, instead of the cabbage and sauce that are suggested.

This is one of my favorite recipes from Rachael Ray. These nachos are even company-worthy. The ingredients and steps are a bit involved (she can do it in 30 minutes) but are very worth the effort. I made a double batch of these for a family reunion and they were devoured. *Added note - If you end up with extra grease after browning the meat, drain. I recommend assembling as written for a wonderful presentation. The chips don't get soggy (unless you leave them sitting for a very long time!). :-)

Best with fresh vegetables from the garden or farmers market. Tip: do not overchop ingredients; onion and tomatoes should not be mushy. We use pico de gallo as a relish, dip, topping for baked potatoes, Mexican food or fish, or mix it with pinto beans, black-eyed peas or rice.

This recipe was given to me a few years ago. It is absolutely mouth watering. The fontina cheese is a must, though a little more expensive. I wouldn't recommend trying to make these without it. Light cream cheese and sour cream can be used in place of regular. Enjoy.
