    I got this recipe from a South Beach Diet Cookbook. They are so easy to make and the veggies change with the seasons. I make a few batches at a time and freeze them in individual zip locks for an easy grab and go in the morning. Just nuke them for 1 minute and go! Not just for breakfast but for a healthy snack. They travel well too.

Next time chicken is on the menu, why not try this flavorful, satisfying meal instead of your usual fare? If Bali is the ultimate island, then this dinner is the ultimate Bali taste. Chicken braised in coconut milk (Opor Ayam) is a true classic of Indonesian fare. We did change the chicken to white meat instead of the traditional drumstick or wing. New traditions can sometimes be better than old ones.

    When you're counting your calories, this is a good substitute for real icecream, it's sugar free as well. I don't make it too often because of all the additives in the pudding mix, but its good to have around for a sweet tooth. I use different flavor combos, but my favorite is chocolate fudge pudding with cherry jello.

    This is really good. Use large, fresh shrimp for best results (peel before cooking). This comes from one of my favorite diet cookbooks, modified to our tastes. Serve over brown rice for a delicious and complete meal.

    I've recently gone on the south beach diet and have lost 11 pounds to date. This recipe looks so tasty and I can't wait to try it. Being that so many desserts are so filled with carbs I was delighted to find this recipe. So you can have your cake and eat it too! I don't eat dairy so I'm going to substitute all the dairy with non-dairy ingredients.

    I have a huge craving for pancakes in the morning and when you're "beaching" it they are totally out. I found this on a chat site and tweaked it a bit. It sounds odd until you try it.

    Tastes exactly like the real thing! I miss my sweets, and I got to thinking, you can have everything in pumpkin pie except the cream, sugar, and crust. All of those ingredients are very easy to substitute for, and tada--delicious pumpkin pie on the south beach diet, phases 1-3! I actually normally made my pumpkin pies this way, with real sugar instead of Splenda. Pumpkin isn't listed in the book anywhere, but its a squash like zucchini so its OK (or you could make a zucchini pie, or butternut, or crook neck or... I think I'll stick with pumpkin:)

    Here is nice quick and easy breakfast to throw together on a weekend for the whole family. Packed with protein and lots of flavor. Be creative with the meat and cheese that you use. I've used turkey sausage, lean ground beef and center cut bacon. I've also used many different kinds of cheese.
