I'm not above opening the occasional can of Campbell's, but for more adventurous and/or satisfying fare, check these out. Especially recommended: toni gifford's Roasted Tomato Soup (Roasted Tomato Soup).     A thick soup that is full of bacon and sautéed apple flavors. When ready to serve top with mozzarella cheese and have a wonderful crusty bread along side. Adapted from another cooking website's email newsletter.

    This soup is served as an appetizer at the Cottonpicker Restaurant in Burlington, WI. Yes, it calls for canned soup, but the blend of flavors is so tasty, I usually double this recipe. When I have fresh, very ripe garden tomatoes, I peel and seed them and then use them here instead of the canned - yum!

What's especially nice is that roasting enhances the taste even of vegetables that aren't normally that flavorful, such as the tomatoes you get at the supermarket in the winter.     I came up with this recipe the other night and thought my Uncle Vic would appreciate it. It's beautiful with homegrown tomatoes and intensely flavored as the only liquid involved comes from the tomatoes themselves. Serve with croutons or a dollop of sour cream...TASTY!
