    Soups: Tomato Soup . . . Mm-mm, Good!

[Cover photo by *Parsley*.] When you mention soup, many people think first of chicken noodle, but for our family the basic generic soup is tomato. I'm not above opening the occasional can of Campbell's, but for more adventurous and/or satisfying fare, check these out. Especially recommended: toni gifford's Roasted Tomato Soup (Roasted Tomato Soup). My other soup cookbooks include Chow Down on Chowder , Dreamy Cream Soups , For Health and Healing , Hearty Meat Soups , Meat-Free , Out of the Ocean, Into the Tureen and Slurping Round the World .

A thick soup that is full of bacon and sautéed apple flavors. When ready to serve top with mozzarella cheese and have a wonderful crusty bread along side. Adapted from another cooking website's email newsletter.

    Recipe #185129

Another great recipe from Mark Bittman. If you want to add a little heat, use ground cayenne. You can also add diced boneless chicken during the last 10 minutes of cooking. You can used canned drained tomatoes in place of fresh.

    Recipe #260842

A great way to use up fresh tomatoes.

    Recipe #258042

Not sure where it came from originally, but it's a great way to use some of those tomatos from the garden.

    Recipe #35864

Only 3 ingredients to make this soup! This is for the coconut lover.

    Recipe #203946

This is a creamy tomato soup with a bit of heat. Although it is wonderful just as it is, it would also be good with some cooked shrimp. From Carry-Out Cuisine.

    Recipe #201537

From the magic bullet cookbook and put here for safe keeping. Mega quick and easy makes a tasty soup.

    Recipe #196444

This is like the one I used to buy at Ukrops.

    Recipe #96589

I got this recipe from a local website. I've changed it a bit, but it's really good and refreshing. NOTE: if you don't have good fresh tomatoes, use a 2 lb. can

This soup is served as an appetizer at the Cottonpicker Restaurant in Burlington, WI. Yes, it calls for canned soup, but the blend of flavors is so tasty, I usually double this recipe. When I have fresh, very ripe garden tomatoes, I peel and seed them and then use them here instead of the canned - yum!

    Recipe #136884

This is a very tasty "homemade" tomato soup that isn't a lot of trouble to make. My family likes it for supper with grilled cheese sandwichs

This is a terrific way to use field tomatoes. The soup freezes well, so you can enjoy a fresh taste of summer later in the year, and it is equally good served chilled. The Ontario Harvest Cookbook

    Recipe #93583

This is a super tasty thick, rich crock pot soup. Packed full of healthy ingredients.

    Recipe #76188

This recipe came from Canadian Living magazine, adapted for our household...makes a great "fancy" lunch on a weekend even though it's so quick!

    Recipe #12438

A variation on a Molly Katzen recipe I found on the Internet. Though the spices are quite different, the basic ingredients -- tomatoes, lentils and chickpeas -- remind me of the popular Moroccan soup called harrira. Have not yet tried this one but as fall comes, this will certainly make an appearance in my soup pot.

    Recipe #187850

This is a stick-to-your-ribs soup that is homey and delicious. You not only economize with this recipe by using up your stale bread deliciously, you also prepare an international treat that few know about and really needs more recognition. Please note that this could easily be turned into a vegetarian recipe by using vegetable broth.

    Recipe #110910

I really got into roasted vegetables last winter so was thrilled when I discoverd this soup. What's especially nice is that roasting enhances the taste even of vegetables that aren't normally that flavorful, such as the tomatoes you get at the supermarket in the winter. If you don't have vegetable stock on hand, use water. If you like, garnish the soup by floating a couple fresh basil leaves in each bowl.

    Recipe #186477

An easy, flavorful recipe adapted from Cooking Light I've made many times.

    Recipe #112790

Really healthy soup, good to use when there's no time to spend in the kitchen!

I came up with this recipe the other night and thought my Uncle Vic would appreciate it. It's beautiful with homegrown tomatoes and intensely flavored as the only liquid involved comes from the tomatoes themselves. Serve with croutons or a dollop of sour cream...TASTY!
