    Known as Avgolemono in Greece and Aarshe Saak in the Middle East, this tangy velvety soup is a staple at many meals. Aarshe Saak typically has small meatballs in it, while Avgolemono traditionally has rice and no meat. However, there are many regional and personal variations, and this is mine. This version I came up with has has chicken and spinach/mushrooms to make it more filling. Feel free to omit these ingredients or experiment! Note: I always "eyeball" quantities when I cook, so these amounts may not be perfectly exact- always adjust quantities to taste :)

    I adapted this from a recipe from the Food Network, to meet my family's tastes. It's a wonderful soup that will become one of your favorites immediately It freezes beautifully, if there are any leftovers! Don't cut your spinach or basil with a knife, as it will turn the leaves black and not very appealing. Before your soup is done, taste it! This is where you make your final adjustments. Does it need more salt? Does the flavor of the basil come through? Be sure to add any extra spices at this time, not everyone likes the same amount of Italian seasoning, (for example) so season to your taste. This freezes very well. If you freeze soups, always leave at least 1 inch of head-space between your food and the top of the lid.I always buy whole tomatoes and crush them myself. Tyler Florence said that diced tomatoes were flavorless and nearly colorless, I agree! Note: in the Nutritional values, the calories, etc. are given for the WHOLE recipe, not per serving.

    I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

    This soup is hearty and delicious! The meat just falls apart, and the spicy component is a nice change from traditional beef stews. Even a friend of ours who is a self-proclaimed soup hater liked this! We found this recipe in a Taste of Home Heartwarming Soups magazine.     From The Cliff House in Ogunquit, Maine, is this wonderful, glorious clam chowder! It is smooth and velvety, and will warm you to the bone! This recipe is so worth making! Even in the desert, where I live it gets cold, and I made this to warm everyone up and it definately did the trick! This is a definate keeper! I hope you will enjoy! The spice blend can be uses for so many things, I make about a triple recipe, and it keeps well in either a zip bag or a container with a tight-fitting lid. Note: If you get all of your ingredients together before you begin, the cooking part is a snap!

    Perfect comfort food on a snowy or cold night. this is the most amazing soup I have ever had and it gets even better reheated the next day! Not only that but anyone I have made it for has become addicted even if they do not like sauerkraut. It is my mother's recipe and I was easily able to make it vegetarian. It can also be made low fat. I have listed both options for meat eaters and vegetarians. It can be made vegan if vegan ingredients are substituted for the dairy ones but I have not tried that yet. It is best with buttery crackers but it is plenty a meal by itself. Note: I am not sure of can and package sizes so they are estimates, but I think that I am pretty close, this is a hard recipe to ruin.

    This recipe takes some time to make but it needs very little attention. You can work on the main meal while this is cooking. Breaking into the cheesy crust on top is a unique way to present this soup to your guests.
