I know - I know, there are plenty of good soup recipes out there that will use up the leftover turkey from Thanksgiving, however this is the one that my family prefers so I need to save it here for them. Mild flavors for my mild-flavored kids. Can be made in the slow cooker or on the stove top. Instructions include both.
My family's Christmas Eve food tradition is potato soup for supper. This is my very favorite. Made "Christmas Soup" by parsley and red pepper; made Confetti Soup by parsley and minced red, orange, yellow and green peppers; I'll try purple too the next time I make it.
This is a filling soup that smells wonderful and cooks up in a hurry. It is especially good as leftovers, too. This is a great beginner cook recipe as well and can easily be modified for crockpot cooking.
Nothing can beat a bowl of steaming hot soup to warm the soul! This hearty chicken (or beef) vegetable soup is especially welcome and satisfying on a cold winter's day, or if you're feeling a bit under the weather. Serve with a crusty French bread or rolls and fresh butter; would also be great topped with matzo/matzoh balls. From my mother, who has been making this soup since time immemorial. Enjoy!
Comfort food at its best. Many people will tell you to soak your beans first (however, I have been told that you should soak dry beans when using a pressure cooker. Please follow manufactorers instructions in this case). I never do. I just wash them and cook them as below. For a really hearty winter meal, serve these with a loaf of hot fresh bread or a pan of corn bread and a pan of old fashioned crisp fried potatoes. These may also be made in the pressure cooker and crockpot.
Potatoes, breakfast sausage, and cheese combine to make a hearty soup. I use reduced fat sausage so you don't have to drain off the fat. Great with cornbread and salad for a comfort food meal on a cold night.
