A tasty, flavourful soup perfect for Christmas starters or a lunch for the days when you've eaten too much :) and fancy a healthier alternative - so simple, really tasty and a bit spicy, yum!

"Glorious pumpkin shells summon up the delights of autumn and seem too good to throw away. Use one instead as a serving dish. Pumpkin and pasta make marvelous partners, especially as a main course served from the baked shell." From 'Best-Ever Cook's Collection- Pasta' but adapted to our own tastes.

So easy for that cold winter's night. So very easy to make. I have also used left over chicken for this recipe. Fresh noodle's could also be used instead of dried, but you must cut them for using.

This is a nice twist on traditional pumpkin soup. Chipotle chiles give this soup a pleasant heat and smokiness without making it too spicy. Garnish with toasted pumpkin seeds or a light drizzle of pumpkin seed oil

A nice belly warming soup, and the kids love this. Where the recipe calls for process cheese sauce, I use Cheese Whiz, I have made it with tostitos nacho dip cheese sauce and that was delicious also.

This is a really rich and great tasting soup that does not contain cream. If you want to add a cup of cream to it to up the decadence factor, you can. It's easy to make with an immersion blender.

    Recipe #362858

We've eaten this hot and cold and like it both ways. It really is a creamy soup; however, the potatoes add the creaminess, not cream. So you can feel pretty virtuous eating this. You may substitute broccoli or broccoflower the the cauliflower for variety.

A hearty winter soup - do not be put off by the colour as it is made with kidney beans but garnished with sour cream and a few chives makes it very pretty - I sometimes drop a handful of tom thumb tomatoes in while it is simmering and then you get a lovely extra burst of flavour in your mouth.
