    This is wonderfully easy for those fall evenings when you want something tasty, but don't want to spend much time in the kitchen. I sometimes use 1 can of green beans in place of the zucchini if I don't have it on hand. You can also adjust the heat with a different "strength" of Rotel. ENJOY!

    This recipe was created by me! I have perfected the recipe many times over using various guinea pigs, and each time, they say it is better. This recipe has won a couple of chili cook-offs. It is a traditional recipe. You can cook it using beans or without. It is great regardless of how you cook it. I would serve it with grilled cheese sandwiches or mexican cornbread. Always top it with a little shredded cheese to difuse the heat!

    Moderately spicy and very flavorful. Contrast the sweetness and pop of corn kernels with the black beans, and the fragrant chill of fresh cilantro with the flowing warmth of bell and green chili peppers. Very easy and fast to make. If you want to use a crockpot, please do brown the meat (gives wonderful flavor) before putting into a crockpot on low for four hours. You can substitute chicken for the beef if you wish.

    Okay - this soup is very yummy! I didn't believe it until I tried it - a web friend from Memphis sent me this recipe - I thought it was made with too many cans, packages, etc....and come on - a package of dry ranch dressing mix?! But it only took 20 mins to put together and I was short on time - it turned out great - dad loved it - and I did too. Great for working moms, cold snowy weekend afternoons, sons who have to feed aggravating widowed fathers (My Story - LOL) , etc.... I used 95% lean beef and saved the draining step, instead of the tortilla strips, I just served it with restaurant style Taco Chips and we crushed them a bit and stirred them in while eating. Yummy. You can sub chicken stock for the beer - but the beer is best - all the fun effects boil off! Even better the next day!

    Easy Electric Pressure Cooker Chicken Stock

    Let me just say that I LOVE my 8 quart oval electric pressure cooker, and I use it almost exclusively for making stock. and cheesecake. (That's another recipe for another time...) It is so easy and cost effective, not to mention better tasting and better for you - I can't imagine going back to canned broth! I started by following Lorna Sass's recipe to the letter - until I realized that you can't really make a "mistake" making stock. I got tired of throwing away scraps every day, and tired of buying fresh veggies just for stock. I have included step-by-step photos to show how little waste there really is. Basically, over time, I put all of my veggie scraps into a gallon zipper freezer bag - onions (with skins), carrot peels and tops, celery leaves and ends, and garlic peels and ends, and parsley stems. I've tried adding veggies like mushrooms, but this yielded too strong a flavor, so I quickly went back to the basics. When the bag is full, I make stock. Usually, the timing is good - by the time the bag is full, I'm almost out of stock anyway. If I've used bone-in chicken in the meantime, I'll save those scraps, too, in a separate bag. When the time comes, if I feel the ratio of veggies is off, I'll add a little more of one or the other - usually, I add some extra celery leaves, as I don't use as much celery as I do carrots and onions, for example. But whatever - like I said, you really can't mess this up. Because I'm using an 8-quart cooker, and filling it to the max, I get a LOT of stock! Plus, by starting with a whole roasting chicken, I can usually harvest about 4 cups of cooked chicken meat to use in other recipes as well. Considering I can get a roaster for 75 cents a pound, and everything else is scraps, that's quite a bargain!!

    This is a very heart warming soup much like a chicken soup but much more flavorful. I make this alot in winter especially during times that my family is sick. It also freezes well and I often ffreeze it into individual portions so I can warm up 1 bowl at a time if need be.My husband likes to add Tapatio or Valentin hot sauce to his soup after I serve him, I like a little he likes alot so this is optional according to your own taste.
