    Tom Ka Kai (Thai Coconut Chicken Soup)

    This is my husband's all time favorite Thai soup - but up until now, I haven't been able to recreate it at home. I've played around with several versions to come up with this one. The authentic ingredients make a HUGE difference - although you can use substitutions, of course, it does affect the outcome. I have been able to find the galangal root (much preferred over ginger!!), the lemongrass, and the kaffir lime leaves at my local asian market. Yum yum yum, worth the extra shopping trip!

    I had seen a similar recipe to this & made a few adjustments to suit our family. I usually make this soup on the stove, but have used a slow cooker for it. We prefer it done on the stove. Adjust the garlic to your own preference, I tend to go on the light side as it can easily overpower the flavours in the soup. I use pot barley, but pearl barley is fine. Use any type of mushrooms you like. Don't leave out the dill weed or the soy sauce, they are an important part of the seasoning in this soup. Serve it with a nice fresh soft or crusty roll or loaf of bread. This will serve 4 as a main course, or about 8 people as a starter.

    Recently had an extra pint of cherry tomatoes on hand and was in search of comfort food. Devised this soup in a pinch and thought it was worth sharing. Mine was a quick soup for one but the recipe has been scaled up and uses the more economical Roma tomato. If you have lots of cherry or grape tomatoes -- they have a sweetness that pairs beautifully with the vinegar -- use them or do a mix with the roma tomatoes. If you are making this Kosher, skip the cheese or be sure to use vegetable broth.

    Mushrooms and vermouth - who knew they'd taste so good together? Very good, broth-based soup where the mushroom flavor really shines, since there's no cream or milk. It's also vegetarian but could be made vegan (substitute olive oil for butter and vegetable broth for chicken broth). We usually have this all year round, but like it especially to start a Thanksgiving or Christmas dinner. Especially nice since you can make it in advance! Adapted from "Colorado Cache".

    This is a real money saver!!! I noticed a recipe Cream of Something and then found 20 other variations on the same thing. This is my variation. If you compare mine to all the others you will notice I leave out the bouillon and herbs. This is so you can flavor it at time of use with the herbs and bouillon flavors that compliment your recipe. I also prefer to use the Better than Bouillon in a jar (or other brands) as the first ingredient is always whatever the flavor is...beef, chicken, lobster, mushroom, etc.
