WOW! Saw this recipe and had to adopt and post. I grow tons of basil and freeze my pesto (Thanks to Zaar directions) I tried this and really enjoyed it as did the family. This is a great recipe for summer harvest or anytime of year. I added in some veggies as DH and I love to eat fresh vegetables and he likes substantial soups.(these additions are in parenthesis) I hope you enjoy. Adopted from Mr. Food- a hometown celebrity chef

I got this from my friend Ellen when I was sick. I liked it so much I asked her for the recipe. She adapted this recipe from a Sandra Lee cookbook. It originally called for 16 oz bag of mixed veggies - she subbed the celery, carrots and peas but you could sub anything you want.

A recipe from Guilt Free Cooking from Taste of Home. I made it for my boyfriend. The taste is wonderful and it's very filling. Also low-fat and can be done in 20 minutes.

Very filling and Delicious, especially on a cold winters Day!

I got this recipe from a friend, who served it to me one chilly night. It is very much a "comfort food" for me and quite easy to make with leftover chicken. When you are adding the eggs, be careful to add them very slowly and make sure the soup is not too hot, otherwise your eggs will split. I find it helps to take the soup off the burner for a few minutes before adding the eggs. You should end up with a smooth cream-like base to your soup, not broken eggy bits like in egg drop soup.

Original recipe from a former colleague. This is so good with either left over chicken or or turkey or with meat purchased especially for the recipe. I added a specific amount of pepper and a pinch of dried tarragon. A good soup for kids to make and enjoy!

This isn't MY dad's chicken soup recipe, it's just what it was called. I think this originally came from Bon Appetit. I have always made it with pasta instead of rice. The thyme in this is what makes it tasty. Prep time does not include cooking the chicken.

A recipe from Coup de Pouce. I made it today and it's very good and filling. It's an healthy recipe.

Love, love, love this recipe! It's done in less than 20 minutes and is so flavorful and creamy. Perfect with a salad and garlic bread or a grilled cheese! I have made my own alterations/additions to this recipe. Here's a tip on the sage: sometimes I'll use dried sage instead of the fresh sage leaf and in that case I start with about a teaspoon and add more to taste if need be. Also, I use my immersion blender and puree the soup right in the pot rather than using a regular blender...Giada just uses a regular blender, either way works fine! Enjoy!

This was an experiment that turned into a pleasant surprise. I started with a recipe from the Zuni Cafe Cookbook and added a few ingredients for taste and color and increased the quantity for my hungry family. It requires some chopping but comes together rather quickly and is very tasty! (Made in the Midwest with Michigan Asparagus:)

Alternative "diet soup" that does not include cabbage. Recipe is from Good Housekeeping. To retain freshness and nutrients keep a 2 day supply of Basic Soup in the refrigerator. Pack remaining soup in 3 cup portions in airtight containers, leaving some room for expansion. Freeze.

A soup from the stone age! My great-grandmothers were making this one, but have to admit those grandmas could make anything worthwhile!

    Recipe #84849

Modified from Southern Living. This is a great way to use leftover holiday ham. Use 2 cup or 1 (16-0z.) lean ham steak. Don't forget to toss in the bone for added flavor.

Yum, yum, yum. That's all I can say about this tasty soup. You can also sprinkle each bowl with a bit of light Parmesan or Romano cheese. Enjoy!

Oh so simple soup, great way to use up leftover chicken or get a ready cooked on in the grocery store. Has a light, lemony flavor. Posted for the Zaar World Tour 2005 to Greece.

This is not a Broccoli Cheese Soup, or a Cream of Broccoli soup...this is just vegetables. It does have a starch in it, so if you are in a diet that eliminates starches, now you know! Low fat, and very healthy. I like broccoli, celery, and basil, so I like this! Plus it is sooo healthy!

    Recipe #447530

This is great on a cool fall evening with some crusty bread and a glass of wine!

I am posting this recipe to try later. I am always looking for great soups to make during winter months and this sounds different; but yummy!

    Recipe #207907

This is our family's favorite minestrone soup recipe. We've tried others and keep coming back to this one, because it's usually healthier (no oil) and has more ingredients I have on hand. It's such a healthy filling meal. We are not sure where the recipe came from, but it's been on a piece of paper that is falling apart and I knew if I didn't put it in here I might lose it forever one day.
