There are a number of recipes out there that try to duplicate Olive Garden's "Zuppa Toscana" appetizer soup but they usually call for artificial ingredients or seriously lack in flavor.
With or without the addition of chopped kale leaves this all-natural and economical family dish is chock full of traditional flavors and is nearly identical to Olive Garden's signature dish.
Hint: To reduce the fat content of this soup make sure to remove the kale leaves before serving; they absorb grease.
Alternative "diet soup" that does not include cabbage. Recipe is from Good Housekeeping. To retain freshness and nutrients keep a 2 day supply of Basic Soup in the refrigerator. Pack remaining soup in 3 cup portions in airtight containers, leaving some room for expansion. Freeze.

This is my favorite recipe for potato soup. It's a copycat of the one they use to serve at the St. Louis Bread Company (Panera). The recipe originally called for shredding your potatoes, but I never could get them to cook that way. I know they should cook faster, but I never could get it to work.
This soup is what I make for my family every Christmas Eve. I love using the crock pot, especially during the holidays. To cut down on time, I always use frozen hash browns- (diced, not shredded) for the 6 cups of potatoes. I've also added cheddar cheese along with the Velveeta cheese.This soup is delicious served in bread bowls.
