This recipe was published in Parents magazine October 2007. Although it has few ingredients and is quick to make, I found it surprisingly cheesy and tasty. I've added it to my make-often recipe rotation.
A twist on your regular soup with great flavor and low in calories! It is full of vegetables and very filling. Enjoy! If you want a little more Zest to it, add the whole can of Rotel tomatoes and green chiles rather than just half the can.
*When I make it I use 98% fat free cream of mushroom soup, reduced calorie margarine, and the 2% milk Veveeta cheese and I only use about 2/3 lb of the cheese to cut back on some calories
This is my favorite recipe for potato soup. It's a copycat of the one they use to serve at the St. Louis Bread Company (Panera). The recipe originally called for shredding your potatoes, but I never could get them to cook that way. I know they should cook faster, but I never could get it to work.
I found this recipe on another site and I believe it was CopyKat, but I'm not 100% sure. So if you were the kind person that posted this recipe please step forward and take the accolades for this wonderful soup. I did tweak it a bit by adding the minced garlic and the chicken broth because I found it to be a bit thick. The original recipe did not call for the salt, red, white & black pepper, but I found it needed the additional seasonings. I could only find chopped frozen broccoli in 10 ounce packages so I used a total of 20 ounces with no problems. This is comfort food at it's finest - warm, cheesy, flavorful and oh so good!
This is plain and simple but makes a wonderful chili, you may add in other ingredients if desired, my family likes this topped with cheddar cheese and sour cream then served with recipe#105726 --- I strongly suggest to make this 1-3 days ahead the flavors will intensify and ripen, you will really notice a difference in flavor if made ahead --- all amounts may be adjusted to taste.
