This is my favorite recipe for potato soup. It's a copycat of the one they use to serve at the St. Louis Bread Company (Panera). The recipe originally called for shredding your potatoes, but I never could get them to cook that way. I know they should cook faster, but I never could get it to work.
I don't know why it is called "Chili" Soup but that is the name. I got this from my daughter and it is soooo easy and soooo delicious. Great for the long and cold winter evenings. Just have some crusty garlic bread or my Recipe #329435 to put it into. It calls for spaghetti sauce in a jar and I use Paul Newman's Sockaroonie. Yummmm!
If you love good, old-fashioned, down home chicken and dumplings, this is the real thing! Note that this dumpling recipe makes "a bunch of dumplin's" because around here, most folks want more dumplin's than chicken. (prep time includes cooling time for cooked chicken.)

You can make this soup on the stovetop or in the slow cooker.I brought this soup to a boil on the stove and then put it in the slow cooker and let it simmer on low for 2-3 hours. This is a hearty soup that can be put together quickly. If you want to make it in advance, put it together through step 5. The next day, it will be easy to lift off and discard fat, bring it to a boil and continue on with adding the pasta. This can be easily halved for a smaller group.
