The use of buttermilk and cardomom also provide distinctive flavor to the soup. This is filling enough to use as the centerpiece of a comforting dinner or lunch. You can make this vegetarian by using vegetable broth in lieu of chicken broth. On the day the photo was taken, I omitted the mushrooms for the sake of a mushroom-hating guest. Every spoonful was still delicious.

I had this soup this past weekend at a wedding up in Maine and I thought I was in heaven. The chef told me the basic ingredients and I went on a hunt. I found this recipe and made it tonight. The exact same thing I had. Originally it came from a place in New Hampshire :)

A "souper" delicious way to use up leftover turkey! Don't hesitate to mix in leftover gravy or veggies. Left over stuffing? Layer it on top of the turkey. No leftover turkey? Cook boneless turkey breasts in chicken broth and use the liquid instead of milk.

I do not remember where I found this recipe, but it's been one that I've enjoyed for some years. This is rather spicy, and you may want to cut down on the peppers. I generally omit the ground pepper and use 2 tsp. of pepper sauce, but am posting the recipe as I originally wrote it down.

This is a meatless (not vegetarian) Borscht, and even my husband, who MUST have meat with every meal, loves this! Sometimes we make it in summer and serve it cold. It's very tasty! It came from a cookbook many years ago, but I can't remember which one. And I've changed it over the years and I do my own thing, there is no need to measure any of the veggies, it always turns out wonderful. So eyeball it!
